Buffalo Chicken Macaroni Salad for One

I tossed some cubed chicken breast onto the George Foreman Grill, coated it with Tabasco Buffalo Sauce once it began to brown up, and decided not to be a piggy to save some once it was on my plate... I thought a Buffalo Chicken Macaroni Salad would be fun for lunch the next day and it sure was! Didn't even bother Goggling this one folks. Just tossed simple items into a bowl that all seemed to go well with the Buffalo Chicken, onion, peppers and of course celery.

No doubt some Blue cheese or Ranch Dressing would be a great addition, but I didn't have any on hand. When I make pasta for lunch I use half whole wheat pasta, it seems to help with that carb crash we might feel... The boss seems to frown upon naps at work:@)

Buffalo Chicken Macaroni Salad for One
No fancy recipe here folks... Feeding more people? Just mix up a bigger batch
Buffalo Chicken cooked, cooled, diced-leftovers are perfect, pick the meat off of real wings if you have them
Elbow macaroni, cooked and run under cold water to cool, drain well-however much you want
Onion, diced
Bell pepper or jalapeno, diced
celery, diced
Mayonnaise, enough to coat everything
Additional Buffalo sauce or hot sauce, enough to make it as flavorful, colorful and spicy as you'd like
A shake or two of celery seed
S&P to taste
~Mix everything and enjoy!
Eat well, use up those leftovers and have a happy day:@)

  8. A completely different taste idea for me! I would not have thought to bring that buffalo chicken flavor to a pasta salad, and just thinking about it, I'm sure I would love it. It would be "tangy" for lack of a better word. The next time I have some buffalo chicken leftovers, I will try this.
