Buffalo Chicken Stuffed Jalapenos

Not even gonna try to sugar coat it folks, these babies have a little zing and heat to them! If you love chicken wings this is a fun alternative. I like smaller jalapenos for these, keeping them to one or two bite sized treats. They are easier to eat than wings and something a little different for the next game day.
I can smell football in the air!!!
Considering that's nothing but chicken and sauce in those peppers, these may be a bit... overstuffed:@)

Buffalo Chicken Stuffed Jalapenos
Jalapenos, 2-2 1/2", cleaned
Chicken, shredded
Your favorite wing or hot sauce
Small amount of butter-I use about 1/4 tsp per Tblsp of hot sauce
Panko breadcrumbs for top
  1. Bake the cleaned jalapenos at 375 for 8 minutes, remove from oven.
  2. Since I was using a hot sauce I heated it with the butter in a pan on the stove to reduce it and make it a little thicker. Wing sauce would be thick enough already.
  3. I used enough sauce to coat the meat and make it moist.
  4. Stuff the peppers with meat.
  5. Sprinkle the top with panko.
  6. Bake for 15 minutes, then finish them for just a couple minutes under the broiler (not too long though you don't want them to dry out).
  7. Serve with celery and bleu cheese dressing.
Have a happy day:@)

  6. I'm not a fan of chicken wings (because I don't like eating meat off the bones:)) but I do like jalapeno poppers and chicken so these sound really yummy!

  9. Lynne, your home must be just like ours! We smell football in the air too and my husband has already watched every single pre-season game that's been played (alongside of the Olympic games). And that's all we've been thinking about. I so love anything buffalo and it seems to be the flavor of the year! Stuffed in hot jalapeƱos sounds tremendous! Printing right now!

  11. Buffaloes aren't chicken, they are actually big and brave - but I bet even they shudder at the idea of being stuffed with jalapenos! I'll pass on this one, but you do make it look yummy.

  16. This might be too hot for me!!! I like the cheese stuffed poppers, though. Cream cheese is my salvation when it comes to eating those!
