Quick Salsa Using One Can of Rotel

You never know when a serious case of the munchies might hit, around here it seems to be often:@) I always have a can of Rotel (or the Walmart brand) on hand and decided to whip up some salsa. I like that this is a smaller recipe than most, I didn't add an extra can of tomatoes, just one 10 oz can of Rotel.
It packs plenty of heat for me, and I really enjoyed it!
But if you like things hotter, I'm sure adding some fresh jalapeno would be wonderful.

Quick Salsa with Rotel
10 oz can Rotel, drained
heaping 1/8 C Onion, finely diced
small clove garlic, finely minced
pinch of sugar
pinch of salt-I used Lawry's Chile and Garlic
a few grinds of black pepper
a few shakes of cumin (maybe 1/8 tsp if I had to measure)
1 Tblsp fresh cilantro, minced
1/4 lime, juiced (in a perfect world), or 1 tsp vinegar (in my world:@)
-Add everything to a small food processor and give it a few whirls.

  • This is a nice, light salsa. Most jars from the store have a thickener in them, this doesn't.
  • Garlic... You know how you feel about it, if you love it raw, go ahead and give a clove a dice and add it all. Want extra-go for it! Personally, I grated half of the clove with a microplane and felt that was plenty. That's the beauty of making things for yourself!
  • You can eat it right away, but it would be great if it could mingle for an hour.
  • This makes a little over 1 cup of salsa.
  • Update: I drain most of the liquid from the can when I make this now, the pic used all of the juice.

  1. This looks more like the fresh that I like to get in the cooler section. Everytime you mention Rotel, I tell myself to pick some up...'myself' has a bad memory so it never get's in the basket at the market. I will be putting it on my list right now.

    I do appreciate these thoughtful recipes and little tricks that you share..I still think you need to write your own cookbook. xo

    Most blogs assume everyone has large family to feed or that we want to make a huge amount and freeze it. I either end up just forget about making it or I have to do the math & scale the recipe down. With just the two of us at home now, this is perfect!
