Coconut's a favorite of mine so I wanted to share a little Bloggy Love:@)

My grown sons each ate three or four before dinner-who raised those boys anyway???
I will definitely make these again, possible additions:
Pecans, raisins or drizzled with melted chocolate.

Coconut Crisps
Ingredients:
1 C flour
1 tsp baking powder
1 tsp salt
3/4 C butter
3/4 C sugar
3/4 C brown sugar
2 eggs
1 1/2 tsp vanilla
2 1/2 C rolled oats
1 C flaked coconut
Directions:
Stir together flour, baking powder and salt, set aside.
Cream butter and sugar till light.
Beat in eggs one at a time.
Stir in flour mixture, vanilla and oats, then coconut.
Drop by rounded tsp on greased cookie sheet. (I used parchment)
Bake at 375 degrees about 10 minutes.
They will be soft out of the oven, leave on cookie sheet for 5 minutes, then transfer to clean cookie sheet. (I put them on a cooling rack.)

Mmmm, chewy deliciousness! I think I would prefer them chewy anyways... and funny because 1/2 dipped in chocolate is what immediately came to mind, but I think drizzled would suffice:) Yum.

ReplyDeleteTHEY ARE DELICIOUS. Really good. The oats and coconut are sooo good together and the pecans I added took them over the top.
Thanks for a recipe that I will use again and again. And, of course, you KNOW I will have them posted before I can grab another one. With a link right back to YOUR kitchen... (Mr. Sweet just walked thru and said he thought those were the best he ever ate and that he is a connoisseur
of good cookies. HAHHHAAA...he's so cute, I told him he could have one more small one. (he is trying to lose weight).
