Taco Flavored Mashed Lentil Stuffed Mini Sweet Peppers or Jalapenos-Vegetarian/Vegan

If you've been around Pig In Mud for a while you know one of my recurring themes is Stuffed Jalapenos-love 'em:@) I happened to find a bag of mini sweet red, orange and yellow peppers on sale and decided to have a little fun with them this time... So these Taco Flavored Mashed Lentil Stuffed Peppers would be great with either sweet or jalapeno peppers. I mashed the lentils to resemble refried beans and love the pretty colors of the peppers. They were flavored very well and I wouldn't hesitate to make this again!

This would be a great Cinco de Mayo (or any gathering) treat as a vegetarian option
and I'm sure you could easily make it vegan too.
Oh, and if you're looking for a Meatless Monday type idea... I promise you won't be disappointed:@)

I hear they actually sell cans of cooked lentils? Haven't ever seen one myself
I used my pressure cooker, ratio: 1 C lentils to 2 C liquid. 15 minutes high pressure, natural release, drain well.

Taco Flavored Mashed Lentil Stuffed Pepper Snack/Appetizer
For each cup of cooked lentils:
Mash with 1 Tblsp taco seasoning (add more to taste)
1/2-1 tsp corn starch, optional-I added this because my lentils were a little wet
Desired toppings
  1. Spoon lentils into cleaned pepper halves (or fill a disposable icing bag and squeeze into peppers).
  2. Bake at 375 for 10 minutes.
  3. Top with anything you like on tacos. I used sour cream and black peppers.
Eat well and have a happy day:@)

  1. Your stuffed peppers sound so tasty and healthy Lynn! I might feel less guilty drinking my margarita while snacking on them. ;)

  2. Oh... I'm totally making these for cinco de mayo. I do weight watchers and I am thinking that could make these for 0 points. Score!!!

    Have a great weekend.

  3. What a great idea to use lentils! Since I am a major heat wimp, I often stuff mini sweet peppers instead of jalapenos

  4. Looks like a great meatless option, Lynn! You're so creative in your cooking. I've never cooked lentils, that I can remember.
