This would be a great Cinco de Mayo (or any gathering) treat as a vegetarian option

I hear they actually sell cans of cooked lentils? Haven't ever seen one myself.
I used my ♥pressure cooker, ratio: 1 C lentils to 2 C liquid. 15 minutes high pressure, natural release, drain well.
Taco Flavored Mashed Lentil Stuffed Pepper Snack/Appetizer
For each cup of cooked lentils:
Mash with 1 Tblsp taco seasoning (add more to taste)
1/2-1 tsp corn starch, optional-I added this because my lentils were a little wet
Desired toppings
- Spoon lentils into cleaned pepper halves (or fill a disposable icing bag and squeeze into peppers).
- Bake at 375 for 10 minutes.
- Top with anything you like on tacos. I used sour cream and black peppers.
Your stuffed peppers sound so tasty and healthy Lynn! I might feel less guilty drinking my margarita while snacking on them. ;)

What a great idea to use lentils! Since I am a major heat wimp, I often stuff mini sweet peppers instead of jalapenos
