Old Fashioned Gingerbread Cupcakes with Cream Cheese Frosting

Gingerbread... Just the name reminds me of Christmas and as soon as I saw bloggy buddy Sarah's recipe I knew I'd have to whip up some Old Fashioned Gingerbread Cupcakes with Cream Cheese Frosting. I'm glad I did, this is a very nice recipe folks! And the sweet little toppers Rachel gave me were the perfect finishing touch-too fun:@) These cupcakes are nicely spiced and the cake is fluffy and moist.
The recipe is easily cut in half and half makes 8-10 cupcakes. This is one of those recipes I'm glad I found, it will become a special yearly Christmas treat.
So, run, run as fast as you can... Into the kitchen to do a little holiday baking:@)

Old Fashioned Gingerbread-from Hyacinths for the Soul
1 C butter, softened
1 C sugar
2 eggs, well beaten
2 C A/P flour
1 tsp cinnamon
1 tsp ground cloves
1 tsp ground ginger
1 C dark molasses
1 tsp baking soda
1 C boiling water
  1. Cream butter and sugar.
  2. Add eggs, flour, cinnamon, cloves, ginger and molasses, mix well.
  3. Dissolve baking soda in boiling water (it will sputter) and add to batter, mix well.
  4. Pour batter into a greased 9x11 pan and bake as 375 degrees for about 30 minutes or until toothpick comes out clean. (My cupcakes took 18-20 minutes.)
  5. When cool dust with powdered sugar (or add cream cheese frosting, the recipe I used is HERE.)
