The recipe is easily cut in half and half makes 8-10 cupcakes. This is one of those recipes I'm glad I found, it will become a special yearly Christmas treat.
So, run, run as fast as you can... Into the kitchen to do a little holiday baking:@)
Old Fashioned Gingerbread-from Hyacinths for the Soul
1 C butter, softened
1 C sugar
2 eggs, well beaten
2 C A/P flour
1 tsp cinnamon
1 tsp ground cloves
1 tsp ground ginger
1 C dark molasses
1 tsp baking soda
1 C boiling water
- Cream butter and sugar.
- Add eggs, flour, cinnamon, cloves, ginger and molasses, mix well.
- Dissolve baking soda in boiling water (it will sputter) and add to batter, mix well.
- Pour batter into a greased 9x11 pan and bake as 375 degrees for about 30 minutes or until toothpick comes out clean. (My cupcakes took 18-20 minutes.)
- When cool dust with powdered sugar (or add cream cheese frosting, the recipe I used is HERE.)
