Teeny's When Life Hands You Lemons-Meringue Pie

Hey everyone have you heard Teeny's back in town! Michael Lee West (hostess of Foodie Friday) has just published book number two about a self-taught pastry chef that keeps finding herself in all kinds of trouble. Last year she found her fiance cheating on her, then was a suspect in his murder, fell in love with her Mr. Right (who I still feel should be played by Matthew McConaughey:@), and we were left with a preview that she's about to meet a little girl claiming to be his daughter...

I can't wait to see what Teeny's cooking up this time, no doubt this pie will fit well with the story line!
When Life Hands You Lemons-Meringue Pie

This is my first meringue pie!

Teeny's When Life Hands You Lemons-Meringue Pie
Filling:
1 (14 oz can sweetened condensed milk
1/2 C fresh squeezed lemon juice
1 tsp lemon zest
3 egg yolks
1 (8 inch) pre-baked pie shell-I used a store bought graham cracker crust

Meringue:
3 egg whites-I used 4 because, um, more is better:@)
1/4 tsp cream of tartar
1/4 C sugar
  1. In medium bowl mix condensed milk, lemon juice, zest and yolks, pour into cooled pie shell.
  2. Pre-heat oven to 325 degrees.
  3. Beat egg whites and cream of tartar until stiff peaks form. 
  4. Gradually add sugar and beat until stiff.
  5. Spread over filling and seal to edge of crust.
  6. Bake for 12-15 minutes or until meringue is golden brown.
  7. Cool and refrigerate till ready to serve.

  3. This looks so good! I remember the first time I saw a lemon meringue pie in my mom's fridge. I just couldn't help but pick off the little browned peaks...not sure if she ever noticed a few missing. ; )

    Love that pie. Yours is beauty-ful. You have to be so proud.
    AND I read books by Michael Lee years ago and they were wonderful.
    Now I have new books to read.

  17. Lynn, lemon meringue is my favorite. Sure wish this piece was sitting on my table! Looks fabulous. You did an amazing job on your first lemon meringue pie. It's not always easy to get this right. Well done!

    My absolute favorite pie, hands down is Lemon Meringue pie. My Grandmom made the best and I think about her everytime I see or eat it!

    I haven't read any of her books yet but I love Dianne Mott Davidson's books. She also includes recipes in the book.

    You did good! This was my favorite pie as a child. My mom used the recipe off the Argo Corn Starch box!
    I haven't made one in a long time. Must do soon!
