Quick and Easy Weeknight Chicken and Bisquick Dumplings for Two

Seeing the original recipe for Bisquick fluffy dumplings was the inspiration for this super easy Weeknight Chicken and Dumplings meal. I took ~all~ of the shortcuts here folks, cooked chicken, canned veggies, Bisquick and a gravy mix... But some nights, you don't need gourmet, you just need quick, and this was on the table in about 30 minutes:@) I might add some parsley to the dumplings before mixing them the next time for a little color, and I did sprinkle the stew with dill weed right before serving. The dill just added a little something extra.

Weeknight Chicken and Dumplings-serves 2 people (maybe 3 with small appetites and a salad or fruit)
Up to 1 C cooked chicken, cubed
15 oz can mixed vegetables, drained
Splash of olive oil or a little butter, enough to cook onion and celery
1/2 C onion, small dice
1 stalk celery, sliced
envelope chicken gravy
1/2 C Bisquick
1/6 C milk
S&P to taste
Parsley for garnish, optional-I just poked it in for color, minced is nice, it does add flavor
Light sprinkle of dried dill weed before serving would be good too
  1. In 2 quart pot, cook onion and celery in olive oil/butter for a couple minutes, until softened.
  2. Whisk gravy mix with 1 C water.
  3. Pour gravy into pot and bring to light boil, stir until thickened, reduce heat to light bubble. Add a little more water if too thick, the gravy doesn't need to be stick to the ribs thick for this meal:@)
  4. Add vegetables and chicken to pot.
  5. Mix Bisquick and milk, drop by tablespoon on top of gravy making four dumplings. Cook 10 minutes uncovered, 10 minutes covered.
  6. Garnish with parsley and dill if using.

  2. Ahhh chicken and dumplings is one of my favorite comfort foods. You just can’t beat a nice quick and easy meal to satisfy the hungry soul.
    I always add a little dried parsley to my dumplings.
