These Peppermint Bark Spritz Cookies are my wink and nod to the best selling Christmas candy (and a very nice way to use up a few candy canes). I gave mine a light drizzle of chocolate so we could still see the pretty tree shapes, but you can certainly add more... You know your crowd:@) This is a nice variation of the Peppermint Spritz Cookies my son asks me to make every year. Goodie bags were requested!
I found some chocolate cookie icing on the clearance isle and decided to give it a try...
Easy to use, dries so it's not sticky, and no clean-up ~Not bad!
While I used a round candy for the pics, I did use candy canes for the cookies.
Candy Cane/Peppermint Spritz Cookies
1/2 C butter, softened
1/2 C shortening
3/4 C sugar
1 egg
1/2 tsp vanilla
1/2 tsp peppermint extract
2 1/4 C A/P flour, sifted
1/2 tsp salt-I just used a little pinch
1/8 tsp baking powder
melted chocolate for drizzling
1/2 C butter, softened
1/2 C shortening
3/4 C sugar
1 egg
1/2 tsp vanilla
1/2 tsp peppermint extract
2 1/4 C A/P flour, sifted
1/2 tsp salt-I just used a little pinch
1/8 tsp baking powder
melted chocolate for drizzling
crushed candy canes to sprinkle on top, plan on about 3-4 candy canes for a full batch
- Cream butter, shortening and sugar.
- Mix in egg and extracts.
- Add dry ingredients and mix well.
- Fill press and form cookies onto cool, non-greased baking sheets.
- Bake at 375 degrees 10-12 minutes or until cookies just begin to lightly brown at edges.
- Cool completely on baking rack.
- Add wax paper, tin foil, etc under rack for easy clean-up... Drizzle top of cookies with melted chocolate and immediately sprinkle with crushed candy canes. I only worked on a few cookies at a time.
- Let candy or icing harden back up, store in air tight container.
