Meatballs for Halloween???

Hey everyone! Mexican Surprise Meatballs, how could I not make these for my PIGskin Challenge! Even though it says Mexican, there are no hot peppers or spices in the meatballs. You can add heat by using a hot Picante Sauce or Salsa if you'd like.

What's the surprise... an olive in the center of each meatball!

Now, as we're getting close to Halloween, 
I know there are lots of folks that like to tease the kids... do these remind you of anything?
I'm just sayin'...

Mexican Surprise Party Meatballs from Campbell's Kitchen
2 slices white bread, torn into bits
1/2 C milk
2lb ground beef
2 eggs
1/4 C onion, finely diced
3 cloves garlic, minced
1/4 C parsley, finely chopped
1/2 tsp black pepper
50 small pimento stuffed Spanish olives
2 jars (16 oz each) Pace Picante Sauce
  1. Place bread and milk in bowl, let bread absorb milk. Add beef, eggs, onion, garlic, parsley and pepper.
  2. Mix and form into 50 1" meatballs. Place an olive in the center of each meatball. Put meatballs into 3 quart shallow baking dish.
  3. Bake 350 degrees for 25 minutes or until cooked.
  4. Put meatballs in 6 quart stock pot, add Picante Sauce and heat through.
Notes:
  • I grated the garlic, didn't want biting into a chunk of that to be my "surprise".
  • This is a wet mix, I only added a splash of milk and they flattened out on the bottom. I wouldn't add all of the milk.
  • Even though the recipe does not call for salt, I think it needs some.
  • Using 1 Tblsp of meat, roll into a rough ball, indent it with your thumb, add the olive, then gently bring the meat closed around it. Then carefully roll it between your hands to make it round. Once you make one or two it goes fast. You could have this whole batch rolled in about 30 minutes or less.
  • I used a salsa I had on hand.
  • This is an easy recipe to cut in half or even quarter. 1/4 batch  made 13 meatballs.
  • I like these and think they're different, the reviews are very good. I'd like to try them one more time adding a little salt to see if they're something I'd say might become a signature dish for parties.

  8. I just made Pioneer Woman's comfort meatballs, Soooo good with mashed potatoes. Olives freak me out. Never have cared for them. But my husband loves them and would really like this. The rest of the recipe looks yummy though.

The pic is the original, my grands made a mess, but we used a rolling pin to brake the cookies and they came out just like it and with the jelly snakes, awesome, they still remember the fun!   24. I made those goofy ice cube eyeballs with olives once. I think I'd really like the olive inside of the meatball. Sounds like a very tasty recipe. Funny to have the olive be the stuffing instead of the olive being stuffed ;)
