Loaded Baked Potato Stuffed Mini Sweet Peppers

These Loaded Baked Potato Stuffed Mini Sweet Peppers are a great treat for March Madness (or any time). They would be a great use for leftover mashed potatoes or... You could even use instant mashed potatoes like I did today, oh-yes-I-did. These sweet peppers are pretty thin and can easily be eaten raw, add anything you like in a baked potato and simply brown the tops under the broiler. I added the filling to a disposable icing bag (no tip necessary) for easily filling the peppers. The colors are beautiful and I enjoyed this as a light, yet very tasty, lunch:@)
Want to stuff jalapenos instead? Great! 
I'd bake the 'penos unstuffed for about 5 minutes before stuffing them and finishing them under the broiler.

Loaded Baked Potato Stuffed Mini Sweet Peppers
Mini Sweet Peppers, seeds and membranes removed.
Mashed potatoes
Add ins:
Cheese, bacon, ham, cooked broccoli, chives, sour cream, cream cheese, black pepper, garlic powder, onion powder, etc.
1. Mix fillings.
2. Stuff peppers, cook under hot broiler a few minutes until golden and browned.
