Tip: Disposable icing bags make filling eggs a breeze.
6 hard boiled eggs, halved, yolks popped out
3 Tblsp light mayonnaise-I used regular
1 tsp Dijon mustard
1/8 tsp black pepper
3 Tblsp green onions with pimento, chopped-I drained mine a bit on a paper towel
Paprika and additional sliced olives for garnish if desired-I desired:@)
- Mix yolks, mayo, mustard and pepper until smooth.
- Gently mix in the olives.
- Fill whites, garnish with paprika and sliced olives (if using).
- Chill until ready to serve, best eaten the day they are made.
Eat well and have a happy day!
