Do you see that brown crusty cheese? Oh yea, I may have whimpered... This is another fun play on wings that's a little easier to eat and make. My Tip: If you find a recipe you like, think of different flavor combinations to enjoy it:@)
Buffalo Chicken or Pork Mini Muffins
3/4 C A/P flour
3/4 tsp baking powder
pinch of salt
1/4 C + 1/8 C milk
1/4 C + 1/8 C hot sauce-your favorite, I like Crystals or Frank's
1 egg, lightly beaten
1 C shredded cheddar
1 C chicken or pork, cooked and finely shredded
Bleu cheese dressing for dipping
- Grease a 24 cup mini-muffin pan-I used Baker's Joy.
- Mix first 3 ingredients in large bowl.
- Add milk, hot sauce and egg to dry ingredients, mix.
- Stir in the cheese and meat.
- Let sit for 5 minutes.
- Fill muffin cups with approx 1 Tblsp batter.
- Bake at 375 degrees until puffed and golden, 20-25 minutes.
- Serve with sauce for dipping.
- Makes approx 24.

These sound so delicious and so do the Pizza Puffs, Lynn! We are carb-restricted around here, but I may try substituting almond flour for the A/P that's called for in both of these recipes. Thanks for always sharing such deliciousness!

Hi Lynn, I'm always looking for buffalo wing type recipes and this looks perfect! Now, is the hot sauce you mention something like tabasco???? I'm not sure there is even 1/4 cup in a bottle! And what do you use to put out the fire? Linda

There you go again with those incredible little bite-sized flavor bursts. Buffalo chicken sounds amazing.
ReplyDeleteI made these tonight, and they were delicious. We were low on Tabasco, so I used just under a 1/4 c with a dash of cayenne and a dash of black pepper. The heat was perfect for our preferences. I also cooked them in the regular size muffin pan. The time was the same, and they served up nicely as "buffalo chicken cakes" on a bed of Bibb lettuce with bleu cheese dressing. Thanks for the recipe!

Just made these and they are AWESOME! Didn't have Baker's Joy, but spray oil worked fine, so not to worry. I can see making these with leftover pork or roast beef just as easily.
