- Heat oil, cook onion for a few minutes, add garlic and cook for another minute.
- Add everything to pot, bring to a boil, reduce heat and simmer for about 25 minutes or until vegetables are tender.

Popeye's Potato (Flake) Soup
- Add butter and onion to large saucepan. Over medium heat, melt butter and cook onion for a minute or two.
- Add flour, cook until incorporated.
- Add milk, potato flakes, stir. Cook until slightly thickened.
- Add spinach, cheese and ham, cook stirring constantly until cheese is melted.

Creamy Chicken Curry Stew or Soup
- Sprinkle chicken with S&P.
- In large pot, brown chicken in butter over medium heat. Cook until no longer pink, remove from pot.
- Add onion, carrots, celery and cook until onion is translucent. Add more butter if needed.
- Add garlic and cook for a minute stirring constantly.
- Add potato, tomatoes, water, bouillon, curry, and oregano. Bring to boil, reduce to simmer.
- Cook until potatoes and carrots are tender, approximately 30-45 minutes or so.
- Add peas and return chicken and any juices to pot.
- Stir cornstarch into milk, add to pot. Cook until gravy thickens. Use more water or milk to thin if necessary.
- Add S&P to taste.

Instant Pot Pork Chop Soup (or Stew) with Potatoes and Vegetables
- Add everything through water to pressure cooker vessel.
- Add lid, seal, and cook on high for 18 minutes. Automatic release.
- Remove meat to cutting board. Cut into bite size pieces or shred.
- Reserve 3/4 C cooking liquid.
- Add vegetables to vessel, lid and seal. Cook on high for 2 minutes, automatic release.
- Stir flour into reserved liquid, add back to pot. It will most likely thicken up as you stir it, if not, use saute feature to thicken.
- Add pork back to soup.
- S&P to taste.

Greens-N-Beans Soup (Quick Smoked Sausage and Kale Bean Soup)
- Brown sausage and remove from pan.
- Add olive oil and onion, cook over medium heat around 5 minutes.
- Add garlic, stirring continually cook for about 1 minute.

Quick Creamy Frozen Vegetable Soup -Vegetarian and Meat Options
- Cook onion and celery in olive oil for 5 minutes, add bouillon cube and crush it while you can see it.
- Add veggies, garlic powder, and celery seed. Cook over medium heat until vegetables are cooked, about 15-20 minutes.
- If using cooked meat, add now to heat through.
- Whisk flour into milk, pour into pot.
- Bring to light boil, reduce heat and cook until soup thickens. Add additional milk or water to thin if necessary.

Busy Day Slow Cooker Dry White Bean Soup with Ham
I'm still trying to use my Crock Pot(s) more and decided to toss a quick Slow Cooker White Bean Soup together one day before leaving for work. It was nice and easy (the most involved part was cutting up a carrot and stalk of celery), and I have to say, it turned out pretty good:@) There are a million recipes out there, I'll just list what worked for me. As with most things, I made a half batch, you can simply double the recipe below for a regular amount of soup. Nothing gourmet, but this was a hearty, nourishing, cold weather meal!
Easy Slow Cooker White Bean Soup with Ham
1 C dry great northern or navy beans, picked through and rinsed-I didn't soak mine
4 C water
1 1/2 tsp Chicken Better Than Bouillon
Heaping 1 Tblsp dry minced onion
1 tsp garlic powder
1 large carrot, chunky diced
1 large stalk celery, chunky diced
1/4 tsp chili powder
1/4 tsp dry thyme
Cooked ham, diced, as much as desired added at end, just heat through
14.5 oz can diced tomato with juice
Couple handfuls of frozen chopped spinach
Additional garlic powder and onion powder and Chicken Better Than Bouillon as desired
Small splash vinegar or lemon juice-I used red wine vinegar this time
- Add everything up to and including thyme to vessel of 4 quart slow cooker.
- Cover and cook on low 8 hours ~or~ until beans are soft.
- Stir, add ham, tomatoes and spinach, taste, add a little more garlic/onion powder and Chicken Better Than Bouillon if desired to taste.
- Heat thorough, maybe 30 minutes. Add small splash of vinegar and serve.

- Cook beef until no longer pink.
- Add onion and pepper, cook until softened, sprinkle with flour, cook for a minute.
- Add everything else, bring to light boil, cook for about 10 minutes, or until potatoes are soft, and serve.

Saturday ReView: Ham, Dry Bean and Tomato Soup & Barbie Baby Sled DIY
- Cut the bottom off of the Tide bottle with sturdy scissors, make it about 2" tall.
- Wash well and dry thoroughly.
- Cut the back straight across (the wider end of the bottle). Mine is about 1 3/4" tall. The nice thing about this bottle is it has two creases so you can gauge exactly what the back would be, you'll see😊
- Then cut the sides down on an angle, but not all the way to the bottom. Leave at least 1/2" of the bottom of the bottle showing.
- Lastly, Barbie needs something to pull the sled with.
- Use about 2' of ribbon, cording, elastic, yarn, etc.
- I hot glued it to the front inside of the sled. If your Dremel is charged, you could make a couple small holes.
- Tie the two loose ends into a knot at your desired length.

How to Make Dry Vegetable Soup Mix in the Instant Pot Pressure Cooker
- Pour dry soup vegetables into fine holed colander, sort, rinse and drain. Keep little flavor packet with noodles separate.
- Add dry veggies to PC vessel. Add dry onion, sprinkle with olive oil and add water.
- Set to manual for 18 minutes. While cooking cut up your vegetables and meat. Aim for the generous side of 1/4" thick.
- Use manual release when done, remove lid.
- At this point your peas will be soft and mushy and the barley will still be aldente. Stir it to mash the peas a bit so the soup thickens up a little.
- Add the seasoning packet and your fresh vegetables. Set to manual for 4 minutes. If your family likes really soft vegetables use 5 minutes.
- Use manual release when done, remove lid, stir in meat and seasoned salt or Better Than Boullion to taste.
- Serve with lots of freshly ground black pepper and if you have fresh parsley handy, some stirred in at the end would be nice too.

Saturday ReView: Rustic Cabbage and Bean Soup & DIY Fire Pit for Barbie
I have to tell ya folks, in all of my years blogging, this Rustic Cabbage and Bean Soup goes way back to 2011 and it's still one of my favorites! (I'm thinking I need to whip up a batch and try to take an updated picture...) This is such a healthy and robustly flavored soup, and it's one of those that gets even better the next day. If you're a fan of cabbage, don't hesitate to try this recipe, I think you'll be happy:@)

Creamy Potato, Sausage and Sauerkraut Soup -Oktoberfest or Any Day
If you'd like to try something new, and are willing to think about using an ingredient in a different way, I highly recommend this Creamy Potato, Sausage and Sauerkraut Soup! While sauerkraut in soup might sound odd, it adds a bit of a tangy taste and naturally goes well with potatoes and smoked sausage. It's rare that I use a whole can of kraut, so it's nice to have another recipe to help use it up. This makes a nice hearty lunch on a crisp fall day, and it comes together fairly quickly too:@)
