Two Ingredient Sugar Free Jello Fluff or Whips -Retro Recipe

This Sugar Free Jello Fluff or Whips Recipe has been around forever and was on my to-try list for a long time. As we're looking forward to warmer weather (hello...  Mother Nature???) I thought it was time to whip some up. This is a light and creamy dessert or snack, and honestly, a pretty one too:@) I like the foamy fluffy tops. Choose any flavor of sugar free Jello, and maybe even a make a couple colors for a Mother's Day Brunch. The only other ingredient we need is non-fat plain Greek yogurt, it will add a little tang. This is a diabetic friendly, low carb, low Weight Watchers points, treat. Ma tried this with me and we both give it a thumbs up. Don't hesitate to give it a try folks, I think it will appeal to most. 
A great way to use up that last yogurt that may be flirting with the expiration date:@)

Sugar Free Jello Fluff or Whips
Four serving size sugar free Jello, any flavor
3/4 C boiling water
1 C ice water, add ice, fill to equal 1 C
8 oz yogurt
  1. Dissolve Jello in boiling water. 
  2. Add ice water to Jello, stir.
  3. Add yogurt and Jello to blender, blend on high for 30 seconds.
  4. Pour into glasses or bowl. Makes 4 servings.

Frank's Hot Sauce Pumpkin Seeds

Last year I carved a small pumpkin and ended up with 1/2 C of seeds... In keeping with my things don't have to be complicated theme, these Frank's Hot Sauce Pumpkin Seeds were simply baked ~low and slow~ with literally nothing except the hot sauce and salt. They dried out perfectly and were a nice spicy snack:@) Low carb too, in case that's of interest to you. Don't toss those seeds folks!

Frank's Hot Sauce Pumpkin Seeds
For each 1/2 C pumpkin seeds, cleaned, washed and dried with paper towels:
1 Tblsp Frank's Hot Sauce
1/4 tsp table salt
  1. Spread seeds onto baking sheet in single layer.
  2. Bake at 275 degrees for 10 minutes.
  3. Remove from oven, stir, make a pile in center of baking sheet. 
  4. Drizzle with hot sauce, mix well. Sprinkle on salt, mix well.
  5. Return to oven for 30 minutes, stirring twice. At this point I broke up any that were stuck together. Return to oven until dry and crunchy, check every 10 minutes. Mine only took the extra 10.
  6. Cool completely, store in airtight container.

Microwave Pepperoni Chips -Crispy with Less Fat

Microwave Pepperoni Chips? Yep:@) This is a nice way to enjoy pepperoni while saving a few calories. Place pepperoni on a napkin or paper towel and it only takes about a minute to create a nice crispy treat! As the meat crisps up, the excess fat melts out. You'll need to test the time for your microwave though. Mine seems to be extra strong and only needs about one minute... The nice thing about pre-sliced pepperoni, the width is pretty consistent. Talk about a nice addition to a charcuterie board or munchie platter for parties and tailgating! 

I think you'll like this once you learn the timing for your microwave folks.

Microwave Pepperoni Chips
  1. Lay pepperoni on a paper towel or napkin in single layer.
  2. Microwave, start at 1 minute, look at them. The microwave may be full of steam when you open the door, air it out. If not crisp cook for about 5 second increments until it does crisp up. Once you know how long your microwave takes you'll be able to just set it for that amount of time.

Jimmy Dean Sausage Stuffed Jalapeno Poppers

The jalapeno plant in my raised bed has been producing, so I whipped up some Jimmy Dean Sausage Stuffed Jalapeno Poppers. Oh my, that was a very nice snack:@) Actually it was on a Sunday where the boys weren't coming to dinner, and both the Eagles pre-season and Phillies were on TV... I called this dinner! This is a versatile recipe, start with the Jimmy Dean recipe and change it up any way that sounds good. I'll list a few suggestions below. We can also use those colorful little sweet peppers in addition to, or instead of jalapenos.

Possible additions:
Garlic powder, seasoned salt, black pepper, parmesan cheese, 
(I added the spices to these and sprinkled the tops with parm).
Wrap in partially cooked bacon, or crescent rolls.
Top with breadcrumbs or Panko breadcrumbs.
Use different flavors of sausage.

Jimmy Dean Sausage Stuffed Jalapeno Poppers-from Jimmy Dean
16 oz Original Jimmy Dean Sausage
8 oz cream cheese, softened
8 oz shredded cheddar cheese
Approximately 32 medium jalapenos
  1. Cut peppers in half lengthwise, clean seeds and membrane.
  2. Fully cook sausage and crumble it small.
  3. Thoroughly mix sausage, cream cheese and cheddar cheese together.
  4. Stuff jalapenos, slightly mound the tops.
  5. Bake at 425 degrees for 10 minutes or until lightly browned.
  6. Can brown tops under broiler if desired.

Meatball Sub Stuffed Jalapenos

How about a hearty football munchie or lighter lunch that doesn't call for bread or a roll... These Meatball Sub Stuffed Jalapenos can even fit into a low carb meal plan if you use meatballs and sauce specifically made for that:@) Super simple and exactly as it sounds, fill cleaned pepper halves with cooked meatballs, add some pizza or pasta sauce, a light shake of Italian seasoning, and top with mozzarella. Very filling and there are lots of options for the meatballs themselves, both homemade and store bought. 

Meatball Sub Stuffed Jalapenos
  1. Heat/cook meatballs and sauce on stovetop or in microwave.
  2. Bake cleaned jalapeno halves at 375 degrees for about 5-8 minutes (firmer-5, softer-8).
  3. Stuff with meatballs, cut meatballs in half if necessary, add a shake of Italian seasoning, and sprinkle with mozzarella.
  4. Place under broiler for a couple minutes, until cheese begins to brown.
  5. Before serving drizzle top with more sauce and sprinkle with parmesan cheese, a little messy, but oh-so-good!

Saturday ReView: Low Carb Gummy Candy Recipe & Happy New Year!

Happy New Year Folks!!! I thought I'd share a low carb recipe today since I know a lot of us are trying to cut back a bit now that the holidays are over. These Low Carb Gummy Candies are made with sugar free Jello, come together quickly, and can be made in any shaped silicone mold. They only call for three ingredients and got a big thumbs up from my crew:@)

Dill Pickle Cole Slaw -Low Carb Option

I love pickles and just happened to have all of the ingredients on-hand to try this Dill Pickle Relish Coleslaw:@)  This is a great addition to my cole slaw series here on the blog and it would be perfect with an ~any type of shredded meat~ sandwich loaded with bar-b-que sauce. This was truly a different side salad and I'm looking forward to making it again, maybe with slow cooker BBQ chicken, or when it's nice enough to grill out. I might add a little carrot next time, just for a punch of color, but otherwise, it's really good just as it is. Recipe is easily cut in half or scaled down.
The original recipe made it low carb, 
but since it called for items I'm not familiar with I'll let you click the link for that option.

Dill Pickle Coleslaw-adapted from Bobbi's Kozy Kitchen
14 oz bag shredded cabbage-approximately 8 cups
1/4 C mayonnaise-I added a little extra
1/2 small onion, grated
1/2 C dill pickle relish
2 Tblsp sugar
2 Tblsp white vinegar
1 tsp celery salt
S&P to taste
~Mix everything and serve-yep, it's that easy!

Quick Pickled Zoodles or Zucchini Ribbons (Pickled Summer Squash Salad)

The operative word here is ~quick~ and this is about as basic as a pickle can get folks... I had one lonely yellow squash in the fridge and decided to try these Quick Pickled Zoodles or Zucchini Ribbons. I opted for the thick spiral blade to try to hurry things along even more, and yes, they were ready in 15 minutes! You can let them go a bit longer but aim for up to 30-45 minutes maximum to maintain crunchiness. These pickles are white vinegar puckery, cool and refreshing, and make a very nice summer side dish. Especially if we have extra squash to use up:@) Tuck this idea away if you're a pickle lover, I think you'll enjoy it. I surprised myself and kept going back to the bowl for another bite... Low carb lifestyle? Simply use a sugar substitute.
  And you don't need to spiralize them, cutting thin coins would work too. 
But spiralizing is fun and all the cool kids are doing it:@)

One note: Zoodles can be very long...
You might want to give the pile a quick cut in half or quarters.
Depending on your crew, this could be a pickle condiment or a pickled salad side dish...
I have one son that would pile this onto his plate like mashed potatoes:@)
*I had a 7" squash, I made 1/4 recipe of brine, which would have easily been enough for 2 squash.

Quick Pickled Zoodles or Zucchini Ribbons-from Food Pleasure and Health
4-6 small zucchini or yellow summer squash spiralized or cut into very thin coins
2 C white vinegar
2 C water
1/2 C sugar
1 tsp salt
  1. Dissolve sugar and salt in vinegar and water.
  2. Add squash, cover and marinate 15-45 minutes, stirring or shaking often. 
  3. Truthfully, I used Lock-N-Lock, tossed everything into it, closed the lid and just kept shaking and flipping the bowl upside down.

Weight Watchers Cucumber Cooler (Easy Sugar Free Cucumber Salad) -Low Carb, Diabetic Friendly

I'm always interested in trying recipes that cut back on sugar. This Weight Watchers Cucumber Salad was a very refreshing treat! And using a couple cukes from my planter was an added bonus:@) My go-to vinegar has always been cider vinegar, so it's nice to try something with the little added bite from white vinegar. Although I will say the sweetener did tone that down quite a bit. If you're looking for a simple pickled side salad, I don't think you can wrong with this one. 

The only thing I did differently, I used Sweet-N-Low instead of Stevia.
And I chose to mix it and let it sit on the counter for a bit to get the juices flowing before placing in fridge.
This salad is easily scaled down.

Weight Watchers Cucumber Cooler/Salad-from Nana's Recipe Box
1/4 C white vinegar
1 Tblsp fresh lemon juice
6 packets of Stevia-or your sweetener of choice
1 tsp salt
1/8 tsp black pepper
1/4 C sliced onion
3-4 medium cucumbers, thinly sliced
1/4 tsp celery seed
~Mix everything, chill for at least one hour or overnight (I let mine marinate overnight).

Jellickles -Sugar Free Jello Flavored Dill Pickles -Southern Treat or Bloggy Blooper?

I hear there's a snack that originated in the south called Koolickles... It's a dill pickle flavored with KoolAid here. The KoolAid makes it a fun color and adds a burst of fruity flavor. Most recipes call for sugar so I decided to try Jellickles, a Sugar Free Jello Flavored Dill Pickle! I used strawberry Jello and simply poured it into a 17 oz jar of dill pickle spears (and shook like crazy:@). They had color and flavor after a couple days, these pictures are over a week. Aim to serve them in about a week. Did I expect these to be a big hit here in Philly, especially with ~my~ crew? Honestly, no. But I will say, I placed some chunks with toothpicks out during Sunday dinner and each son did try them...
One said he tasted pickle first, strawberry after. The other Strawberry Jello first, pickle second.
So... If you're looking for a conversation starter, or something different to talk about,
this little project is less than $2. It's a good one to get the kids involved in too.
If you make a batch today, you'll have something fun for the 4th of July BBQ!

Oh, and speaking of that dinner conversation?

Citrus and Garlic Marinade for Grilled Zucchini and Summer Squash -No Sugar

This Citrus and Garlic Marinade for Zucchini is a great option if you're looking for a marinade that doesn't have any sugar or sweeteners. Thyme always seems to pair nicely with lemon too. We found it especially tasty on the pieces with caramelized or charred bits. Even though this recipe is for vegetables, it does still require some dedicated marinating time, plan on at least three hours. The original recipe calls for lemon juice, I had a lime to use up so I did half and half. We all thought this was a very nice, low carb side dish:@)
 And yep, these are the first two zucchini I hand pollinated here.

Quick Note: I love my grill pans but don't always love having to wash them...
For the first time I picked up some of the disposable 2-packs of grill toppers from Dollar Tree this year. 

I've been enjoying them:@)

Citrus and Garlic Marinade for Grilled Vegetables-adapted from food.com
2 Tblsp fresh lemon and/or lime juice
2 Tblsp cider vinegar
1 Tblsp diced fresh garlic
1/2 tsp dried thyme
1/2 tsp lemon pepper seasoning
few hearty grinds black pepper
1/3 C olive oil
2-4 zucchini and/or summer squash, cut into chunks
extra 1 tsp lemon pepper seasoning
  1. Mix all in zip top bag, marinate vegetables on counter for about 3 hours. Turn bag every once in a while.
  2. Right before tossing vegetables onto the grill, drain liquid from bag. Mix in one more tsp lemon pepper seasoning.
  3. Grill over medium high heat for 5-8 minutes or until desired doneness. Stir a couple times during cooking.

Frozen Jello Popsicles -Sugar Free (or not)

Ever find yourself with a few extra boxes of Jello??? (Thanks Ma:@) We've just started seeing nice warm weather here in Philly and were treated to a spectacular weekend! I thought it would be fun to mix up some Sugar Free Frozen Jello Popsicles. And of course you could use regular Jello too. Most of us have a set of molds in a closet or drawer, or you can get them anywhere, Walmart, Dollar Tree and mine are Tupperware, $1 from the thrift store. Nothing ground breaking here folks, just wanted to toss the idea out there, I love that's it's sugar free and good for low carb too.
What I like about this most is the texture of the pops, they aren't rock hard...
If you're from Philly you might be familiar with the top of water ice that stays kinda clear, syrupy and crystal like?
Yea, that:@)
 As a point of reference, a four serving size filled my six Tupperware set with a tad leftover.

Frozen Jello Popsicles
1. Any flavor or size of Jello you'd like.
2. Prepare per package directions.
3. Pour into molds and freeze until completely frozen through.

Lemon Lime Soda and Soy Sauce Marinade for Grilled Chicken

This Lemon Lime Soda and Soy Sauce Marinade is another recipe that was written up for shish-ka-bobs... But the zucchini was really sad looking at the store so I just used peppers and tossed everything into a grill basket instead. Now, is this the most robustly flavored marinade on my blog? Honestly no, ~but~ it does make a nice mildly flavored chicken, and it's an easy marinade that only calls for three pantry ingredients. That makes it a good recipe to tuck away, especially if you have a little soda left over to use up:@)
Low carb lifestyle? Use sugar free soda.

Lemon Lime Soda and Soy Sauce Marinated Grilled Chicken-from Taste of Home
3/4 C lemon/lime soda
1/2 C soy sauce-they suggest low sodium, I used regular
1/2 Canola oil-I used vegetable oil
  1. Mix everything, marinate chicken for 8 hours or overnight. Mine marinated for 24 hours.
  2. Grill as desired.

*No Sugar* Sweet and Spicy Mixed Party Nuts

I know that a lot of us have committed to cutting back a bit on calories now that the holidays are over, but... It's the time of year for playoff football and we do still need snacks for that! And maybe something strong to wash them down with if you're an Eagles fan-ugh. I grew up with Sweet'N Low (anyone remember the little packs of iced tea?), so I thought it would be fun to try these Lower Calorie Sweet and Spicy Party Nuts for the games over the weekend. And I have to say, they are pretty darn good! While they don't have a crunchy candy coating like my slow cooker peanuts, there is no mistaking that they are sweet. And you control the heat with your choice of chili powder and how much cayenne you add. Don't hesitate to give this a try folks, I think you'll be pleased, I know we were:@)
Full disclosure: I just picked up a can of mixed nuts at Dollar Tree 
and filled the rest of the measuring up with peanuts to equal one cup.
I'll list my smaller 1 C version below, you can click the link for the original 3 C version.

No Sugar Sweet and Spicy Party Nuts-from Sweet'N Low
1 C mixed nuts-preferably non-salted-mine were salted
1 tsp butter, melted
1 tsp chili powder
shake of cayenne pepper
1 packet/envelope of Sweet'N Low
1/4 tsp sea salt if using non-salted nuts
  1. Mix nuts with butter. (I put butter on parchment paper and melted it in microwave. Then laid the parchment on a baking sheet and mixed nuts right on the parchment.
  2. Sprinkle nuts with chili powder, cayenne, Sweet'N Low and salt (if using it).
  3. Mix well.
  4. Bake at 300 degrees for 25-30 minutes, stirring every 10 minutes.
  5. Cool completely, store in airtight container at room temperature.

Crock Pot/Slow Cooker Pork Roast -Trisha Yearwood Recipe

I made this Slow Cooker Pork Roast using a sirloin pork roast and have to say it turned out great! This is one of those dinners that smells wonderful cooking for hours on a cold day and I do look forward to making it again. The easy (and very flavorful, love the addition of lemon) gravy is a nice little bonus too. It's not too late to give this a try for Oktoberfest/Crocktoberfest folks, or... Any ole Sunday dinner. I think you'll be happy you did:@)
May I suggest serving with German Red Cabbage with Apple-here.
Oh yea, we are hearty eaters here at Pig In Mud:@)
Approximately 2 lbs of pork takes about 6 hours on low.

Crock Pot Pork Roast a Trisha Yearwood Recipe-from Sparkles of Yum
2.5-3 lb pork roast, trimmed of fat
1 tsp garlic powder
1/4 tsp ground ginger
1/2 tsp dried thyme
1/2 tsp black pepper
1 Tblsp vegetable oil
2 C chicken broth
2 Tblsp lemon juice
1 Tblsp soy sauce
3 Tblsp cornstarch-or other thickener for low carb
  1. Sprinkle pork with salt.
  2. Mix dry spices and rub all over pork.
  3. Heat oil in skillet and brown meat on all sides.
  4. Place pork in 4-6 quart slow cooker-just make sure the Crock Pot is big enough to hold everything.
  5. Mix broth, lemon juice and soy sauce, pour over meat.
  6. Cover and cook on low 8-10 hours or high 4-5 hours-I used low.
  7. Remove meat from vessel and cover with foil.
  8. Pour liquid from vessel into 2 C measuring cup. Skim fat off of top. Measure 2 cups of liquid, adding water if necessary. 
  9. Pour 1 1/2 C into sauce pan, stir cornstarch into reserved liquid, then add to pan. Heat, stirring frequently until gravy is thick and bubbly. 
  10. Add S&P to taste.
  11. Slice pork and serve with gravy.

Grilled Dijon Summer Squash -No Added Sugar or Sweeteners

The mustard in this Grilled Dijon Summer Squash side dish was a nice little change of pace. I really liked the oregano too... So I guess what I'm saying is, don't hesitate to add this one to your to-do list if you have some over-achieving zucchini to use up folks:@) I kept mine simple and only used squash and onion, you'll see the recipe recommends peppers, mushrooms and tomatoes too. The marinade doesn't call for anything sweet, so I'm thinking this would also be a nice low carb option.

If I'm making something with mustard in the title, 
I'm going to make sure it's a prominent flavor! I doubled it for this squash.
The marinade is easily cut in half for a smaller batch.

Grilled Dijon Summer Squash-adapted from Taste of Home
1/4 C olive oil
2 Tblsp red wine vinegar
1/2 tsp dried oregano
1 1/2 tsp Dijon mustard-I doubled this
1 garlic clove, minced
1/4 tsp salt
1/8 tsp pepper
2 medium zucchini, cut into 1/2" slices
2 medium yellow squash, cut into 1/2" slices
1 medium onion, quartered and separated
1 small sweet red pepper, cut into pieces-I didn't use this
1 small yellow pepper, cut into pieces-I didn't use this
6-8 whole fresh mushrooms-I didn't use these
6 cherry tomatoes-I didn't use these
Sprinkle with Kosher salt before serving if desired
  1. Heat grill pan or vegetable grill rack to medium high on grill.
  2. As grill heats up, mix marinade in large plastic zipper bag or in large bowl. 
  3. Add veggies and toss a few times to coat, let sit for 15 minutes.
  4. Grill for 8-12 minutes, turning/stirring once or twice, or until desired doneness.

Zoodle Scampi (Summer Squash, Garlic, Olive Oil and Butter)

I really don't eat much seafood folks, but I ~do love~ olive oil, butter and garlic:@) So when my son brought me some beautiful yellow squash from his garden I thought I'd try a simple Zoodle Scampi. Oh boy, that was a good idea! Is there someone in your life that says he doesn't care for zucchini? This scampi might just change his mind, it has a ton of flavor and cooks up in no time. This would be perfect with grilled or rotisserie chicken, but I grabbed a fork and called it a light vegetarian lunch. Tip: When I want garlic to be a primary flavor I like to use my garlic press.

Zoodles are great for low carb, but if there's room in your diet for some pasta too, 
go ahead and make this a Zoodle-N-Noodle side dish:@)

Zoodle Scampi
For each 6-7"-ish crook neck squash or zucchini, zoodled:
onion, a few very thin slices
drizzle of olive oil-maybe 2 tsp
pat of butter-maybe 2 tsp
garlic, a large clove-either minced or pressed-I used my garlic press
a couple shakes of crushed red pepper
S&P to taste
fresh parsley for garnish
  1. Heat olive oil and butter in skillet, add onion and cook slowly until translucent.
  2. Add garlic and crushed red pepper, cook for a minute.
  3. Add zoodles and a hearty pinch of S&P.
  4. Cook until desired level of doneness. I like my squash to still have some bite so I only cook it for a couple minutes. 
  5. If you feel it needs a little more butter when done... um, add it:@)
  6. Sprinkle with parsley and serve.

Fresh Lemonade Cucumber Salad

I've been waiting for garden cucumbers to try this Fresh Lemonade Cucumber Salad that's been floating around in my head for a while. The idea was to use fresh lemon juice instead of vinegar and purposely ~sweeten~ it up with sugar, you know, like lemonade:@) You could use a sugar substitute for a low carb version if desired. This is one of those side salads that's best served around 2 hours after it's mixed, it doesn't take long for the lemon to create a pickled effect. Don't hesitate to give this a try if you have an extra cucumber and would like to make something different!

Fresh Lemonade Cucumber Salad
One large cucumber, sliced very thin-I used a couple smaller ones
a few thin slices of onion, chopped-as much as you'd like, you know your crowd:@)
zest of half a lemon
juice of whole lemon
1 Tblsp sugar
1/2 tsp lemon pepper seasoning (or S&P to taste)
~Mix well, let mingle in fridge for about 2 hours.

Deli Style Spicy Pickled Eggs with Jalapeno

Two of my most popular posts of all time are Mustard Pickled Eggs and Amish Red Beet Pickled Eggs... So yep, I will try a new pickled egg recipe every once in a while, and Easter is the perfect time for it:@) These Deli Style Spicy Pickled Eggs with Jalapeno caught my eye and as with the others, they are great as is (cold adult beverage optional), as deviled eggs or diced in potato or macaroni salad. It's the jalapeno that makes these eggs a little different, use as much, or as little as you'd like... You know your crowd.
Speckled eggs were a surprise from dyeing them in the Instant Pot HERE.

What I did differently: I didn't poke holes in the eggs before adding them to the jar, that just didn't appeal to me. I also didn't have a fresh jalapeno at the time??? At the end of summer I picked the peppers that were left on the plant and tossed them whole into the freezer, so I cut one in half and used that for my 4 egg test batch. I will be using more peppers, and fresh peppers next time:@) This is a pic of the egg after marinating 5 days.

I have to say, of the pickled egg recipes I've tried so far, I like this one best for eating out of hand as a snack.
All of them make great egg salad:@)



Deli Style Spicy Pickled Eggs with Jalapeno-from Delicious Table
12 hard boiled eggs, peeled
4 C white vinegar
4 C water
1 Tblsp sea salt-I used Kosher
1 Tblsp black peppercorns
2 Tblsp pickling spice
1 tsp crushed red pepper flakes
6 cloves garlic, peeled and smashed
5 jalapenos, 1/4" sliced
  1. Poke holes in eggs with toothpick, toss toothpick, and place eggs in sterilized mason jar or vessel(s) large enough to submerge all eggs. I did not poke holes in my eggs.
  2. Place jalapeno slices on top of eggs.
  3. Bring vinegar, water, salt, peppercorns, spices and garlic to a boil.
  4. Pour over eggs. You will have more liquid than needed, I'd try to spoon some of the spices into each jar. 
  5. Allow liquid to cool on counter for about an hour, cover and store in refrigerator.
  6. Eggs will be ready in about one week. Eat within a couple weeks.

Adobo and Lime Grilled Turkey Tenderloins with Asparagus

They were forecasting our first 75 degree Saturday and I told everyone at work I'd be grilling! And boy, these Adobo and Lime Grilled Turkey Tenderloins with Asparagus were a very nice way to fire up the grill for the first time this season:@) I kept it very simple, literally using nothing more than Adobo seasoning, lime, pepper and some olive oil. In a perfect world my asparagus would be a little thicker, but for $1.49/lb... I'll gladly use whatever's available. If you haven't tried turkey tenderloins folks, they are very nice and grill up beautifully. I used a grill pan for this meal, but this cut of meat is perfect for kabobs too.
I think this flavor combination would also be great with chicken or pork.

The Adobo seasoning I used:

 Adobo and Lime Grilled Turkey Tenderloins with Asparagus
1 lb turkey tenderloins, cut diagonally 1/2 thick by about 1" long
1 lb asparagus, cut into pieces
zest of whole lime
juice of half of the lime, reserve the other half
1 1/2 tsp Adobo seasoning
1 Tblsp olive oil
several hearty grinds of black pepper
vegetable oil for grill pan
  1. Place turkey and asparagus on counter.
  2. Grate lime zest into bowl, squeeze half of the lime into bowl, add Adobo seasoning, olive oil and pepper, stir.
  3. Add turkey and asparagus to bowl, mix well with marinade and set aside.
  4. Place grill pan on grill and heat to medium high.
  5. Rub grill pan with vegetable oil, toss turkey and asparagus into pan, spread out into single layer.
  6. Cover and grill medium high for 5 minutes. 
  7. Open cover, stir, try to get second side of meat placed towards flame to char. Set timer for 3 minutes or cook until desired level of doneness.
  8. Remove from grill, let sit for a minute then squeeze the other half of the lime over meat and asparagus.
