Lemon and Dill Coleslaw

We're big dill fans here at Pig In Mud, so it didn't take long for me to try this Lemon and Dill Coleslaw. You can tell I think something might be special if I break down and buy a fancy red onion:@) All the flavors worked well together, and this is a very nice change of pace if you're looking for a side salad that's a little different. I think the addition of lemon makes it a bit more summery too. This recipe can be easily scaled down, I aimed for half and we all enjoyed it with Sunday dinner.

Lemon Dill Coleslaw-from Neilsen Massey
8 C cabbage, shredded
2 C carrot, shredded
1 C red onion, thinly sliced
2/3 C fresh dill, chopped ~or~ 1 tsp dry dill-can add more to taste
1/2 C sunflower seeds-I did not have these
3/4 C mayonnaise
zest of one lemon
1/3 C lemon juice
1 1/2 Tblsp sugar
1/2 tsp lemon extract
S&P to taste
~Mix, let mingle for at least one hour in refrigerator, or up to overnight. Stir and serve.
