Much like corn on the cob in summer, I do try to eat asparagus often in the springtime. This Oven Roasted Asparagus with Italian Dressing and Extra Garlic was super simple and very tasty! Cooking it on a disposable pan made clean-up pretty easy too:@) Nothing exact or ground breaking here, coat with your favorite salad dressing and toss in some fresh garlic. Healthy, hearty ~and~ a very nice side dish.
- Drizzle asparagus with Italian dressing, just enough to coat it.
- Add slivered or minced garlic, as much as you'd like... You know your crowd:@) I added one clove of garlic for about 7 spears of asparagus. I do think slivered garlic would make a prettier presentation.
- Roast in 425 degree oven for 7 minutes, stir, return to oven for 5-7 minutes longer or until desired doneness.
- Sprinkle with salt and serve.
- Optional: Sprinkle with grated parmesan cheese (the kind in the can).
