Panko and Parmesan Topped Zucchini Appetizer -Diabetes Friendly

These Panko and Parmesan Topped Zucchini Appetizers are surprisingly good folks! Al dente squash, crunchy panko, salty/sharp parm, and... The recipe is from a diabetes website. I've made them a couple times since my plants have started producing and have to say they are a great snack and fun way to use up some zukes. Don't hesitate to give this one a try, I think you'll like it too and might just convert someone that thinks he/she doesn't like zucchini:@)

The only thing I did differently: I just can't boil zucchini... nope-too soggy. Simply microwave 1/2" slices on each side for 30 seconds (for older store bought squash) or 15 seconds (for tender young fresh from the plant squash). I think you can easily scale the topping back to about 1/4th for a 6"-ish thin zucchini if serving one or two people.

Panko and Parmesan Topped Zucchini Appetizer-from Every Day Diabetic Recipes
2 zucchini cut on diagonal 1/2-3/4" thick
1/2 C panko breadcrumbs
1 Tblsp grated Parmesan
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp seasoned salt
1/4 tsp black pepper
1 Tblsp reduced fat mayonnaise-I only had regular
  1. Heat broiler, line baking sheet with foil.
  2. Either add zucchini slices to boiling water for 3-5 minutes, drain and pat dry, or microwave 15-30 seconds on each side (recommended).
  3. Mix toppings, brush the top of each slice with mayo, spoon on topping and press down lightly. 
  4. Broil 4" from heat for 2 minutes or until the crumbs brown up nicely (watch closely).
  5. Sprinkle with additional salt (if there's room in your diet for it) and serve immediately.

  5. Ooh, these sound delish! I don't think any recipe will get Bill to enjoy zucchini, but it's worth a try. If he doesn't bite, I'm happy to eat the whole batch :)

  6. I've done something similar to zucchini, Lynn, but I like your thicker slices. I can't eat soggy zucchini either, and like it crunchy. Adding the panko is a nice addition, and of course a little parm is always yummy.

  8. I got a late start planting my zucchini seeds but they've popped up already and hopefully, I'll have plenty of zucchini by August. Love the panko on these!
