Some of these measurements may seem kind of small, just guess at them as best you can.
I have a 1/8 tsp measuring spoon and fill it half way. Or if you're making this for a larger crowd double the recipe.
Quick Pickled Mixed Vegetable Salad with Turmeric
15 oz can of mixed vegetables, drained well
2 Tblsp vinegar-I used cider vinegar
1 1/2 Tblsp sugar
2 Tblsp onion, thinly sliced or small diced
2 Tblsp red pepper, either bell, drained pimento or drained roasted peppers, diced
1/8 tsp dry mustard
1/8 tsp garlic powder
1/16 tsp turmeric-add more if you'd like, I hear it's good for us
1/16 tsp celery seed
four hearty grinds of fresh black pepper
- Combine everything in bowl except can of veggies. Add mixed vegetables, gently mix and let marinate at least 3 hours. I make it in a Lock and Lock bowl and just turn it upside down every time I pass it.
Oh yeah, I'm sure gonna make this, I have all these ingredients and love all these flavors, and yes turmeric is suppose to be good for ya, I'm trying to use more an add whenever I can, thanks for sharing
ReplyDeleteWhat a colorful salad and I really enjoy using turmeric. I don't know about you, but it seems like everytime I use turmeric I manage to get a little stain on either a kitchen towel or me :)
