Cheddar Bay Biscuits

I'm sure there's ~someone~ out there but I've never heard anyone say they don't like Red Lobster's biscuits... Heck, I rarely eat seafood and even I love their biscuits! While the kids are fond of our light and fluffy dinner rolls, there were no complaints when these Cheddar Bay Biscuits hit the table... Of course their mouths were full, but you know what I mean:@) Cheese, butter and garlic, what's not to love.
The recipe calls for each biscuit using 1/4 C of dough, we did find these to be very large biscuits. I would cut back next time, I'd rather eat a few two smaller crusty biscuits than one monster one. This is a wet, sticky batter, but don't worry, it will bake up nicely. Recipe easily cuts in half or even a fourth for one person.

Cheddar Bay Biscuits-from One Perfect Bite
2 C A/P flour
1 Tblsp sugar
1 Tblsp baking powder
2 tsp garlic powder
1/2 tsp kosher salt-the kids said it could use a little more
1/4 tsp cayenne, optional-I just gave the jar a quick shake
1 C buttermilk
1/2 C butter, melted
1 1/2 C sharp cheddar cheese, shredded

Topping:
3 Tblsp butter, melted
1 Tblsp fresh parley, chopped-I just sprinkled in a little dry, fresh would be perfect
1/2 tsp garlic powder
  1. Combine flour, sugar, baking powder, garlic, salt and cayenne in large bowl. 
  2. Mix buttermilk and butter in another bowl, pour into dry ingredients and gently mix with spatula until just moist.
  3. Gently fold in the cheese.
  4. Drop 1/4 C batter onto parchment or silicone lined baking sheet. (I would use less batter next time.)
  5. Bake in 450 degree oven for 10-12 minutes or until golden brown.
  6. While baking, mix topping ingredients. 
  7. Once out of the oven brush the top of biscuits with butter mixture and serve immediately.

  1. I ashamed to say that I'm the someone out there who has never tasted a Cheddar Bay biscuit :), but boy do they look delicious. Anything with cheddar makes me a happy girl and I am southern enough to know you should always use buttermilk in biscuits. So yours are definitely a winner.

  8. I love Red Lobster's biscuits, Lynn. I tried a copycat version of them once, but the recipe called for Bisquick. I loved to try this version, and yes, I'd rather eat two smaller ones, too.
