Sweet Heat Cucumber Salad
One large cucumber, peeled, quartered and diced about 1/4" thick
1/2 small onion, sliced thin
1 small jalapeno, seeds and veins removed, sliced thin-more if you'd like:@)
1/4 C sweet red bell pepper slices
1/4 C sugar
1/4 C cider vinegar
1 tsp kosher salt
1/4 tsp ground ginger
A few grinds of fresh black pepper
-Mix everything and let marinate for at least 4 hours stirring occasionally, longer is better. I leave mine on the counter but the pesky Food Police would probably want you to keep it in the fridge...

I'm a big cucumber lover any time of the year, and I think this sounds like it has a wonderful kick. I wonder if it would even make my husband like cucumbers since he love jalapenos.

I made cucumbers in vinegar & sugar last week, too!! It had to be the temperatures, 'cus this morning is cold & rainy & all I want it something HOT!
