Bobby Deen's Goulash

Hey everyone! Bobby may be busy skinny-ing up his Moma's recipes, but this Philly girl is redoing one of his. I've been making this Goulash for a couple years now and it's very flavorful, I highly recommend it!
My only concern was the amount of sodium, there are 5 ingredients in the recipe that contain salt. I've completely omitted one of them and reduced the House Seasoning considerably. I like it and think you might too!

Bobby's Goulash
2lbs lean ground beef
2 large onions, chopped
3 cloves garlic, minced
2 Tblsp Italian Seasoning-seems like a lot but don't cut back on this, it's important
3 bay leaves
3 C water
2 (15oz) cans diced tomatoes
2 (15oz) cans tomato sauce
3 Tblsp soy sauce-I do use all of this
1 Tblsp Paula Deen's House Seasoning-Start with 1 tsp and add more if needed, I don't add more
1 Tblsp Paual Deen's Seasoned Salt-I don't use this
2 C elbow macaroni-I used whole wheat this time and do add an extra handful
  1. Brown the ground beef in a dutch oven, break up and spoon off any grease.
  2. Add onion and garlic, saute until tender, about 5 minutes.
  3. Add everything except macaroni. Stir well and bring to a light boil, cover, reduce heat to simmer and cook for 20 minutes. 
  4. Add elbow macaroni, stir well, add lid and cook for 30 minutes (I say 10 minutes)
  5. Turn off heat, remove bay leaves and allow to sit for about 30 minutes before serving (I take off heat and don't wait).
Notes:
  • This is a very simple recipe to cut in half.
  • I feel you can easily cut back on the meat and add more pasta.
  • The macaroni will get very over cooked if you stick to the suggested times. I set a timer for 10 minutes and that's when dinner is ready! If the 30 minutes of "sitting" time is to add even more flavor, I'd add it to the simmer time before adding the pasta. I even spread the leftovers out in a wide pan to cool faster so the pasta doesn't get too soggy. 
  • Great additions: paprika, either sweet or smoked-about 1/2 tsp. Crushed red pepper flakes-a few hearty shakes. 
  • House Seasoning: 1 C salt, 1/4 C each black pepper, garlic powder, onion powder.

  3. Looks wonderful, a bit like chili but totally unique! My mom used to put elbow macaroni in her chili so this brings back sweet memories! Perfect for a chili winter day!

  9. I have made goulash for years but I never had a recipe. However, I will try this on my gang when they are here to go skiing. A recipe can't hurt Lynn. HA! It sounds very good.

  10. We had goulash so much growing up! I haven't had it in forever either Lynn. I just loved it, but you forget about some things don't you. It is such a comfort food to me. I have never tried it with soy though, of course it is just going to make it richer in flavor. Yum!

  11. Looks damn good to me, whether you changed Bobby's recipe or not! I remember Paula Deen and Bobby being on an episode and Bobby saying this was his favorite birthday meal, that's why I remember this recipe.
    May I say that I think it is a damn shame that Paula Deen took THREE years to tell people she had diabetes?? Talk about not wanting to stop the "flow" of money from her show and books!! I have lost so much respect for her, I can't even tell you. But I guess you are not asking for my opinion of Paula Deen here... you are probably saying: "Hey! Just comment on the Goulash, stupid woman!!!" So please forgive me for going off on a tangent about Paula, and let me say YOUR DISH LOOKS DELICIOUS!

  12. Not a problem Gloria! All I can say is Paula (and family) make some tasty meals, it's up to us to tweak the recipes to fit our life style. I think this Goulash is a good example:@)

  16. Sounds yummy! I'm also concerned about sodium..one thing I've learned, use Teriyaki sauce instead of the soy. Can't wait to try this!

  17. I LOVE LOVE LOVE that you used whole wheat macaroni. I also love that you made goulash! My mother made the absolute best..but I could never replicate it....This one looks great! I just recently lost a ton of weight and have been trying to lighten up recipes...so I'll be making this one! Thanks!

  19. Lynn, I will go with your recipes any day over the Deen's. I can't believe he has a show when the joke on her show used to be that he didn't know anything about cooking. The other brother said he did some cooking in the restaurant but Bobby was not allowed because he did not cook. Perhaps he has taken some lessons. Anyway, your goulash looks delicious and hearty.   21. I love salt but I am very careful with adding it to my cooking. One can always add more at the table but you can't easily take it away.

  26. Around my area we call your dish American Chop Suey. I will definitely give Bobby's recipe a go. There are no salt tomato sauces and tomatoes at my supermarket.
