Peanut Butter and Jelly Cupcakes!

Hi everyone! I was at the mall supposedly looking for a couple new sweaters but ended up in the
Williams-Sonoma store instead-how does that keep happening?
While there I found a cute little toy, a Cupcake Corer...
It's a little gadget that looks like this, and you screw it into the top of the cupcake to make a hole.
The little red plunger pushes the cake out of the corer.
Then you can fill it with what ever you want to, I chose raspberry jelly but strawberry is great too.
And topped them with Peanut Butter Icing!
My sons declared this idea a keeper!

You can use any cake recipe or box mix you like, I chose vanilla cupcakes by Joy the Baker.

Peanut Butter Icing
1/2 C butter, room temp
1 C smooth peanut butter
2 C powdered sugar
3 Tblsp milk (start with 2 Tblsp, add extra as needed to obtain a good consistency)
Cream the butter and peanut butter, add sugar and milk. Mix till combined and fluffy. 
This will not be as smooth as a butter cream frosting, but it is very tasty!
