Soft Sugar Cookies with Jello Frosting

These Soft Sugar Cookies are pretty and festive, ~and~ dangerously good! They get a big burst of flavor from the Jello Frosting! The frosting is the real star of the show... I've wanted to make it for quite a while now and thought the pretty pastel color would be fun for Easter (and Ma's birthday:@) The cookies are written up as cut out cookies, but I trusted the reviews and just used a cookie scoop. I love that they aren't overly sweet, so that plays well with the frosting too. I can see a big platter with several colors and flavors, a little something for everyone... This is a new holiday favorite here folks, they really are that good!

Frosting notes:
I chose to use sugar free strawberry Jello,
figuring the flavor would be stronger and I could control the color better. 
Only ended up needing a heaping 1/2 tsp for a full batch of frosting.
The more Jello you add, the darker and more flavorful the frosting gets.
I kept it on the stiffer side, wanted it to be kind of dry/firm on the cookie.
Sprinkles just bounced off, so I poured them onto a plate and pressed the top of the cookie into the sprinkles.

Soft Sugar Cookies-from All Recipes
1 C shortening (can sub some, half, or all butter. I used half and half)
1 C sugar
1/4 C milk
2 eggs
1 tsp vanilla
3 C A/P flour
1 tsp salt
1 tsp baking soda
  1. Beat shortening, sugar, milk, eggs and vanilla until well combined.
  2. Whisk dry ingredients together, add to mixture. Mix until smooth and combined.
  3. Drop by cookie scoop onto baking sheets.
  4. Bake at 350 degrees for about 10-12 minutes, or until firm.
  5. Cool cookies on sheet for a minute or two, remove to rack to cool completely.

Jello Frosting-from Family Cookie Recipes
1/4 C butter, softened
1 Tblsp sour cream
2 C powdered sugar
1 tsp vanilla
1 Tblsp milk, more if needed for desired consistency
1 Tblsp powdered regular Jello-I used heaping 1/2 tsp sugar free
  1. Add everything to bowl, beat until well incorporated. Add a tad more milk if needed for desired consistency.
  2. Taste frosting, add more Jello if desired. 
  3. Frost cookies with butter knife, press tops into sprinkles if using.

  6. Wow the color of your frosting is great! I'll have to give it a try. I don't decorate baked goods enough to justify keeping a bunch of food dyes but I almost always have a box of jello handy!
