Citrus and Garlic Marinade for Grilled Zucchini and Summer Squash -No Sugar

This Citrus and Garlic Marinade for Zucchini is a great option if you're looking for a marinade that doesn't have any sugar or sweeteners. Thyme always seems to pair nicely with lemon too. We found it especially tasty on the pieces with caramelized or charred bits. Even though this recipe is for vegetables, it does still require some dedicated marinating time, plan on at least three hours. The original recipe calls for lemon juice, I had a lime to use up so I did half and half. We all thought this was a very nice, low carb side dish:@)
 And yep, these are the first two zucchini I hand pollinated here.

Quick Note: I love my grill pans but don't always love having to wash them...
For the first time I picked up some of the disposable 2-packs of grill toppers from Dollar Tree this year.

Citrus and Garlic Marinade for Grilled Vegetables-adapted from food.com
2 Tblsp fresh lemon and/or lime juice
2 Tblsp cider vinegar
1 Tblsp diced fresh garlic
1/2 tsp dried thyme
1/2 tsp lemon pepper seasoning
few hearty grinds black pepper
1/3 C olive oil
2-4 zucchini and/or summer squash, cut into chunks
extra 1 tsp lemon pepper seasoning
  1. Mix all in zip top bag, marinate vegetables on counter for about 3 hours. Turn bag every once in a while.
  2. Right before tossing vegetables onto the grill, drain liquid from bag. Mix in one more tsp lemon pepper seasoning.
  3. Grill over medium high heat for 5-8 minutes or until desired doneness. Stir a couple times during cooking.
