Amish Pasta Salad

This Amish Pasta Salad may have a long list of ingredients, but they all go together well and this salad has lots of big flavors! It's a bit on the sweet side, yet there is still some tang from mustard, vinegar and sour cream. I also like the spices, especially adding paprika. I've used paprika as a garnish but rarely think of it as an ingredient. If your family is fond of creamy salads, don't hesitate to give this one a try folks, it will be on the menu for Sunday dinner when that starts back up again:@)
 The only thing I might do differently next time is, I'd like to mash the yolks before mixing with everything else.
I think that would make a pretty salad that's lightly tinted yellow.
They say the full recipe makes about 12 C of salad, it's easily scaled down.
Leftovers? Add chicken, tuna or ham and call it lunch:@)

Amish Pasta Salad-from The Southern Lady Cooks
16 oz pasta, elbows or shells
5 hard boiled eggs, shelled and diced
1 C celery chopped
1 C green bell pepper, chopped
1/2 C onion, diced
2oz jar pimento, drained well
3 Tblsp sweet relish, drained
1/2 tsp paprika
1/2 tsp celery seed
1/4 tsp garlic powder
1/4 tsp black pepper
1 1/2 C mayonnaise
1/2 C sour cream
1/4 C sugar
2 Tblsp yellow mustard
1 Tblsp cider vinegar
~Cook pasta, drain, rinse under cold water to cool and drain well.
~Mix everything well. It's good right away, but best if you let it chill for an hour or so.
