Method for one hearty meal:
Approximately 1 1/2-2 C cubed butternut squash-I aimed for 1/2" dice
garlic powder
seasoned salt-your favorite brand
butter, however much you'd like
small handful of fettuccine broken in half, enough for one meal
- Add squash to steamer basket, place basket in pressure cooker vessel.
- Add 1 C water, sprinkle garlic powder and seasoned salt over all of the squash.
- Set pressure cooker to 5 minutes, use automatic release.
- Pour squash into bowl with butter, cover bowl.
- Add one more cup of water to the vessel that you already cooked the squash in (don't pour out original water).
- Add pasta directly to water, push pasta under water.
- Set pressure cooker to 5 minutes, use automatic release and immediately drain pasta.
- While pasta is cooking, mash the squash with potato masher or fork, adding more seasoned salt if needed.
- Stir squash into the pasta and serve immediately.
Eat well and have a happy day:@)
This sounds so quick to make in the pressure cooker Lynn and it's healthy for you too. :)
ReplyDeleteI'm still learning how to use my Instant Pot, and now you've taught me how to do pasta, thanks Lynn! I love the combo here, sounds great!

What a great meal to cook in the IP! I have done pasta and it’s so great because it doesn’t need drained. A one pot meal is always a winner.
ReplyDeleteSounds like a nice meatless lunch! It's a cloudy, dreary day here....and this pasta would certainly brighten my plate :)
