Honey Lime Red Cabbage Coleslaw

Ding, ding, ding, we have a winner here folks! Boy I ~loved~ the lime and garlic in this Honey Lime Red Cabbage Coleslaw, not to mention the color is amazing! This should marinate about two hours, time got away from me and the pic is after six hours, so the purple really colored the carrots... Try to keep it to around two hours for best presentation. While a nice crunchy side salad for almost any meal, I'm thinking this would be especially good served with burritos or Mexican food. My whole crew gave this a thumbs up:@)

Honey Lime Red Cabbage Coleslaw-from Taste of Home
1 1/2 tsp grated lime zest
1/4 C lime juice
2 Tblsp honey
1 garlic clove, minced-I grated a small one
1/2 tsp salt
1/4 tsp pepper
1/4 tsp crushed red pepper flakes-I just added a few shakes
3 Tblsp canola oil-I used vegetable oil
small head of red cabbage (about 3/4 lb) shredded
1 C shredded carrots
2 green onions, thinly sliced-I added some diced onion instead
1/2 C fresh cilantro leaves-I added a little fresh parsley for color instead
  1. Mix everything except cilantro/parsley, let marinate in refrigerator for 2 hours.
  2. Mix well and sprinkle with cilantro/parsley right before serving.
