Overnight Refrigerator Rolls

My quest for easy and tasty dinner rolls led me to this recipe for Overnight Refrigerator Rolls. We thought they were good, I stuck to the recipe and didn't add any whole wheat flour or herbs. I would use some wheat the next time. What I liked was having the mixing (and associated dishes washed) the night before and working with the chilled dough was very nice. We enjoyed them with a drizzle of honey!

This recipe makes 12 large 3" rolls, I'd call them hamburger buns. 
They even had that shape...
Definitely regular cheeseburger size:@)

Overnight Refrigerator Rolls-from Taste of Home
2 1/4 tsp yeast or 1 package
1/2 C warm water
1/2 C warm 2% milk
1/4 C butter flavored shortening-I used butter
1 Tblsp sugar
1 tsp salt
1 egg
*3 C A/P flour
  1. In large bowl dissolve yeast in warm water.
  2. Add everything else but only *2 cups flour. Mix on medium for 2 minutes.
  3. Stir in enough of the last cup of flour to make a soft dough. Do not knead.
  4. Place in greased bowl, turning once to grease the top. Cover and store in fridge overnight.
  5. When ready to make rolls, punch down dough.
  6. Turn out onto a lightly floured surface and divide into 12 pieces.
  7. Shape into a ball, place 2" apart (seam side down) on greased baking sheets. 
  8. Cover and let rise until double in a warm place, approx 1 1/2 hours. 
  9. Bake at 400 degrees for 15-20 minutes or until golden brown. Cool on wire rack.

  1. I should be ashamed to admit it, but I have only made actual bread with yeast a few times in my life. I will make "quick breads" but not stuff like this. I would really love to try it and totally amaze and confound the husband. He'll wonder who the pod person in the kitchen is.

  4. The ingredients in the recipe are the same for my dinner rolls that I make using the bread machine for the dough. I use butter and a little more sugar) I never thought of refrigerating the dough until ready to use it :)

  16. They look so good! It's a convenience to be able to make a the dough the day before and then just let them rise and bake while making dinner. I love Taste of Home recipes as they are usually people's family favorites

  17. Bring on the cheeseburger and a little BACON or maybe PULLED PORK! These look fantastic. Fresh bread is one of my weaknesses and I love homemade buns.

  21. Whew! Thanks for checking in with me. I see that I replied twice on here. Not sure how that happened, but I'm sure it's my techno kluttz thing going on. ;-)

    Glad all is well there. Just miss you when you're not posting and wanted to be sure you were okay. Hope you are enjoying some nice weather. We actually have the air on, and it's raining this morning. I'm getting ready to start a major throw away/give away campaign in my house. A true spring cleaning. We have too much stuff, and I feel the need to go through it all. A major undetaking when you are a magpie aka packrat.

  22. Read your recipe as 1(one) used butter. This is why I don't cook. Used-Butter rolls do not sounds as yummy as these.
