I made the small 2.6oz pouch of salmon, so I'm going to give you the measurements for that small amount. It would serve one, maybe two people with smaller appetites and a few side dishes.
Salmon
2.6oz envelope salmon
1/2 tsp Old Bay Seasoning
1 heaping Tblsp dried breadcrumbs
1 Tblsp mayonnaise
2 tsp onion, finely diced
2 tsp bell pepper (red and/or green), finely diced
A little black pepper
1/8 C breadcrumbs
1/4 tsp Old Bay Seasoning
Olive oil
Tarter Sauce (recipe follows)
- Mix the first 7 ingredients breaking up the salmon.
- Mix the 1/8 C breadcrumbs and 1/4 tsp Old Bay in a separate bowl.
- Shape 2-3 salmon patties about 3/4" thick, coat entirely in breadcrumbs.
- Cover the bottom of an 8" skillet in olive oil (about 1/4" deep) and heat to medium.
- Fry the patties until golden brown on each side.
- Set on paper towel to drain.
- Serve with Tarter Sauce.

1 1/2 tsp relish
1/4 tsp spicy mustard
