Sun Dried Tomato Dip!

Hey everyone! It's week 5 of my Personal PIGskin Challenge and I found this recipe on Epicurious.com.
A little healthier, no cream cheese or sour cream in site, and vegetarian too! (Just don't tell the guys.)
Sun Dried Tomato Dip
1/4 C oil packed sun dried tomatoes
2 Tblsp chopped bottled roasted red peppers
1/2 C walnuts-toasted
1 tsp finely chopped shallot
1 1/2 Tblsp red wine vinegar
2 Tblsp water
1/4 C olive oil
Put everything except EVOO in the food processor, puree.
Stream oil in slowly. Season with salt.

My notes:
  1. I dehydrated some tomatoes from the garden this summer so that's what I used.
  2. Comments suggested adding extra vinegar, so I did! I used 1 Tblsp water, and 2 1/2 vinegar.
  3. Comments also suggested cutting back on the oil if you used oil packed tomatoes.
  4. I did not use a shallot, but added a Tblsp of chopped onion.
  5. I also added 1/2 tsp sugar.
  6. I like it, it's different for me, but not something I'll add to the "just gotta have again" list.
  7. But hoping you love it if you try it:@)

  7. MMMM! Sounds good. I am bookmarking this one. Having dinner with friends this weekend and I am bringing this for treats. Can't spell the hord overs word. I posted for TT. Let me know what you think. I really am bad on photography compared to yours and other blogs. Oh well maybe I will learn.     I am so sorry you can't keep blogging. I hope you and your family are well. We will miss all of those cute piggies! Did I ever tell you I grew up on my grandfather's hog farm in KY. I never went to see them much past the age of curosity. They were stinky. LOL I have enjoyed all of your pictures of little piggies though. Reminded me of where I came from.

  20. I'm just able to join this. By the time I saw the other post, the blog was unavailable for me to post. Last week was crazy for me.

    I'm oddball enough to keep trying, and today I was able to at least comment on this thread.

    I hate that you're closing shop for a while. I think of you as one of the HAPPIEST folks that I've run across in blogland. You're always positive and affirming. The world needs more "Happier than a pig in muds" I hope there is nothing wrong and you're just needed a break.

    You are missed.
