Bourbon Banana Bread-Not Your Moma's Banana Bread-from Little Bit of Everything
3-4 bananas, mashed
1/3 C salted butter, melted
3/4 to 1 C sugar-your choice
1 egg, beaten
1 tsp vanilla
1 Tblsp bourbon-optional
1 tsp baking soda
pinch of salt
1 tsp cinnamon
1/2 tsp nutmeg
pinch of ground cloves
1 1/2 C A/P flour
- Mix bananas, butter and sugar with wooden spoon-I used my mixer.
- Add in egg, vanilla, bourbon, mix well.
- Sprinkle top with baking soda and add spices, mix well.
- Stir in the flour.
- Pour into buttered 4x8 pan or divide into cupcake liners.
- Bake at 350 degrees for 50 minutes for loaf or approx 18-20 minutes for muffins. Test with toothpick for doneness.

I love Banana Bread and with the 'bourbon' in it I might just have to try this recipe. Well when it cools off and I'll use my oven again! You are good to your co-workers!

Sounds like something I could eat even though I've had a gastric bypass and have lost 110 lbs.I'm always looking for baked goods that have been altered to have low sugar&fat but high protein.

ReplyDeleteI bet you made everyone happy with your muffins Lynn! Just a little bit of bourbon makes everything better! There's a restaurant in Charleston that's known for their pimento cheese that has a couple of tablespoon of bourbon in it :)
