I splurged and picked up red and green candied cherries this year, so I decided to make some Very Cherry Spritz Cookies. The cherries turn regular cookies into festive little gems:@) I think they look like pretty Christmas flowers... Nothing ground breaking here folks, pick your favorite spritz recipe (I started with a shortbread one), add almond extract, and top each cookie with half of a candied cherry before baking. Almost too pretty to eat... Almost.
For some reason the green cherries were huge and the red ones kinda tiny?
But they both taste good:@)
Very Cherry Spritz Cookies
1 C butter, softened
1/2 tsp almond extract
1/2 tsp almond extract
1/4 tsp vanilla
1/2 C powdered sugar
1/4 C cornstarch
pinch salt
1 1/2 C A/P flour
1/4 C cornstarch
pinch salt
1 1/2 C A/P flour
- Cream butter, almond extract, vanilla and powdered sugar.
- Mix in cornstarch, salt and flour until just combined.
- Fill press, press cookies onto cool, ungreased baking sheets. Decorate with half of a candied cherry. Optional: Chill the cookies on the baking sheets for 10-15 minutes before baking. This isn't necessary but does make a little more defined cookie. I did chill mine.
- Bake at 350 degrees for 9-11 minutes or until lightly golden brown.
- Cool on wire rack.
