Grill Pan Roasted Buffalo Medley-Chicken, Frozen Cauliflower, Celery, Peppers and Onion

Oh this was a great meal folks! I love the idea of these grill pan dinners, everything simply gets doused with olive oil and tossed into a screaming hot grill pan, 12-15 minutes later... Dinner is served:@) This Buffalo Medley could include anything that goes well with Buffalo sauce. Leftover pineapple? Go ahead and add it! A handful of Brussels sprouts? Yep, cut them in half and add them too.

My Walmart still sells frozen cauliflower for around 88 cents a bag... A great value!

Yummy, smoky and with a beautiful char.
Not a hot sauce lover? I think this would make a very tasty meal as is... Just sayin':@)

Grill Pan Roasted Buffalo Medley
As much, or as little, as you'd like:
boneless skinless chicken breast, 1" chunks
onion, 1" chunks
any color bell pepper, 1" chunks
celery, sliced 1/4" thick on the diagonal
frozen cauliflower, do not thaw
olive oil
S&P
Your favorite Buffalo sauce-I used Frank's
  1. Place grill pan on grill and pre-heat grill on high for 15 minutes.
  2. Place chicken and veggies in large bowl. Drizzle generously with olive oil and sprinkle with salt and pepper, mix well.
  3. Toss into grill pan, try to spread out into single layer and reduce heat to medium/high. Set timer for 5 minutes and close grill cover.
  4. After 5 minutes give everything a stir, set timer for 5 more minutes and close lid again.
  5. After 5 minutes give everything a stir, leave lid up and let cook another 2-5 minutes or until everything is cooked through.
  6. Add to large bowl, generously pour your favorite Buffalo sauce over everything and toss well to coat.
Let's fire up the grill and have a happy day:@)

  6. LOVE this! We haven't used our grill pan in ages, but finally have a gas grill so Bill will be less likely to incinerate the veggies, LOL! This combo is perfect and one I've never tried! Happy Sunday, Lynn!
