Coconut Milk and Mango Cole Slaw

I'd like to thank Food Network Magazine for adding to my series of different coleslaws:@) I should probably give a shout-out to Aldi too since they had mangoes for 49 cents. This Coconut Mango Cole Slaw is one of those slaws that's a quick stir and serve. The dressing will be thinner than those with a mayonnaise base but I thought this was very good, especially the bites with peanut, and I do like the addition of lime juice. I just sprinkled the peanuts on top. If you love cabbage and slaws, don't hesitate to give this a try folks.
  Instead of a bagged mix, I sliced some cabbage and made thin matchstick carrots.
