Guacamole for One and a Chalkboard Writing Tip

Most of the time when I make Guacamole it's as a snack for myself and I find that recipes generally call for between 3-6 avocados. This Guacamole for One uses one avocado and isn't so much a recipe as a reminder that if you're cooking for one or two people it's ok to scale recipes back. It's also good if you just want a little to add to tacos or burritos.

Since guac isn't the most photogenic thing in the world, I thought I'd open with my chalkboard pig and a great tip... If you want nice vibrant writing that really sticks out, dip the tip of your chalk in water before you write on the chalkboard. As you write it won't look like much, but as it dries, wa-la!

For a variation, there is an excellent Rick Bayless recipe that can be cut back to 1/3 HERE,
it calls for chipotle and cilantro-yum!

Guacamole for One
One ripe avocado
1/3 lime, juiced
Tblsp cleaned and diced jalapeno
small Roma tomato, de-seeded and diced
1-2 Tblsp onion, finely diced
shake or two of cumin
a few shakes of Lawry's Chile and Garlic salt or at least salt, pepper and smoked paprika
optional addition: crumbled bacon
~Remove seed and scoop out the avocado, mash with lime juice. Mix in the rest, adjust spices and S&P to taste.
