Since guac isn't the most photogenic thing in the world, I thought I'd open with my chalkboard pig and a great tip... If you want nice vibrant writing that really sticks out, dip the tip of your chalk in water before you write on the chalkboard. As you write it won't look like much, but as it dries, wa-la!

Guacamole for One
One ripe avocado
1/3 lime, juiced
Tblsp cleaned and diced jalapeno
small Roma tomato, de-seeded and diced
1-2 Tblsp onion, finely diced
shake or two of cumin
a few shakes of Lawry's Chile and Garlic salt or at least salt, pepper and smoked paprika
optional addition: crumbled bacon
~Remove seed and scoop out the avocado, mash with lime juice. Mix in the rest, adjust spices and S&P to taste.
Eat well and have a happy day:@)
I will dip from now on! I didn't know that!! I will also take a dip into the guacamole. Duh, of course I could make it for two - didn't think of that. It is hard learning to scale back with becoming empty nesters this year!
