Bean and Bacon Soup

Hey everyone! That can of Campbell's sure is convenient, but you'll never reach for it again once you make this quick, easy soup! After the bacon is fried you'll be eating a wonderful, hearty meal within 30 minutes.
I will be making this often and highly recommend it!

Bean and Bacon Soup-from For the Love of Cooking
4 slices bacon-go ahead and add a couple more slices, you know you want to:@)
3 large carrots, peeled and chopped
2 stalks celery, chopped
1 small onion, chopped
4 cloves garlic, minced
Salt and pepper to taste
1 bay leaf
3 (15oz) cans white beans, drained and rinsed
4 C chicken broth
2 Tblsp parsley, minced-I didn't add this
  1. Fry bacon in large dutch oven until crisp. Remove bacon to paper towels and set aside.
  2. Over medium heat add carrot, celery and onion to the bacon fat and saute for about 7 minutes.
  3. Add garlic and saute for a minute stirring constantly. Season with S&P.
  4. Add 2 cans beans, bay leaf and chicken broth. Bring to a boil, reduce to simmer and cover. Let simmer for 15-20 minutes or until carrots and celery are soft.
  5. Uncover and remove bay leaf. Mash some of the beans until the soup thickens slightly. 
  6. Stir in the last can of beans, parsley and bacon, heat through. 
  7. Re-season with S&P if necessary and enjoy.
Notes:
  • I'll probably add a couple shakes of celery seed the next time.
  • I'd rather mash the beans before putting them into the pot, just my personal preference.
  • My boys gave me a bunch of flavored salts to play with-thanks guys! I did use a Smoked Salt because I had it-very nice!
  • This soup will freeze well.

  4. Mmmm yummy! I LOVE soup and have lots of recipes but I don't have one quite like this. I'll have to check my pantry and see if I've got everything...if not I'll be making a list for this week. Enjoy the game today! :)

  18. I grew up on this fabulous soup. Mom made it all the time and I don't know where she got the idea, but once in the bowl and on the table she always added a little vinegar, so of course I did too!

    I have some smoked salt from the local grocery store and it is out of this world. I can just open it and smell it for a high!

  19. Honestly Lynn, a friend called me yesterday and said her young daughter asked her to make Bean and Bacon Soup and she wondered if I had a good recipe. I am so glad I have your link already emailed to her for this yummy, easy soup. I've made the Senate Bean Soup, but I think this is what she had in mind...like Campbells, but homemade and better.   20. Lynn, you are right that this soup would be better than the canned one. I used to like it but it seems to me that they have cut out some of the flavor somehow. Yours looks hearty and delicious.   33. Thought I would get back to tell you that I had included this in my Friday Finds before you saw it, but did not. I am looking forward to making this, maybe even tomorrow. Hubby is not a big bean soup eater, but I have lots of bacon. If I serve this up with some kind of hot bread, I don't think that he will complain too much. As for me, I love both bacon and beans so I know I will love it. Thanks for sharing. Hope you win one of the SoupaPalooza prizes.

  34. Like Linda, this was one of my dad's favourites - it was probably about the time that Campbells came out with that flavour. I had no idea it was so quick and easy to make from scratch - I only had 2 cans of white beans but the soup still worked out nice and thick - this would even work well in the crockpot. Simple and delicious (and no ingredients I couldn't pronounce) - thank you for posting it!
