Lemon Zucchini Bread
3 eggs
2 C sugar
3/4 C oil
2 C zucchini, grated
2 1/2 C A/P flour
1 tsp baking soda
1 tsp baking powder
2 tsp vanilla
1-2 lemons, just the zest
- Preheat oven to 350 degrees.
- Grease and flour 2 loaf pans or put paper liners in cupcake pan.
- Mix everything except zucchini. Fold in the zucchini.
- Bake 45-50 minutes for bread, approx 22-25 minutes for muffins.
- You can definitely cut back on the sugar (actually I suggest it).
- I estimated 1/3 of the recipe and ended up with 7 big muffins.
- It's your call on how much lemon zest you'd like to use, I've made it with one and it's extra lemony with with two.

ReplyDeleteLynn, I have the same recipe, cut it out of a magazine back in the early 80's. I used to bake these all the time to bring to the office when my garden gave me bountiful zukes. (before West Nile spraying killed off our worker bees that pollinated them so well!). Have to bake these this week! xo

ReplyDeleteI have more yellow zucchini right now than anybody could possibly eat, so this recipe has come right when I need it.
I can make a batch of muffins and freeze them, yay!
Now all I have to do is find more recipes for the 2lb round zucchinis which are fast taking over the potager.

ReplyDeleteLynn, I may have to start a separate folder just for your recipes. I tried the bisquick coconut custard pie and just sent my daughter off to college with the pie plate full! We have more zukes than I know what to do with so I will give this a go!
