Chocolate Pizzelles3 eggs, room temp
3/4 C plus 3 tblsp sugar
1/2 C butter, melted and cooled
1 1/2 tsp vanilla
1 3/4 C flour*
3 Tblsp cocoa powder
2 tsp baking powder
Beat eggs and sugar in large bowl. Add butter and vanilla. Sift the flour, cocoa and baking powder and add to egg mixture. The batter should be stiff enough to be dropped by a spoon. The batter can also be refrigerated and used later.
Use your pizzelle maker's instructions for baking the cookies. Store in airtight container.
My notes:
- *I like to add 3 tblsp of cornstarch to the first measuring cup of flour, then top it off with flour. This helps keep them light and crisp.
- Use good cocoa powder and good vanilla, it really makes a difference.
- I also added about 1 tsp of red and green nonpareils, this just makes them more festive!

I didn't see the pizzelles maker when I went to every William Sonoma in every american town I visited!!!!!AHHHHHHHHHHHHH....I wish I had one!!!! ReplyDeleteHmm, I never had any pizzzelles that weren't anise flavored (blech!) so I was never interested in getting a pizzelle maker. I might have borrow one to try these out because if these are as good as they look, I will need to add a pizzelle maker to my Christmas wish list.

I love pizzelles - i will have to try this chocolate one. My favorite is cinnamon with chocolate chips! My grandmother used to make these all the time. My grandmother bought pizelle makers for my sisters and I when we moved out of our parents house!
