Wish I could say it's an old family recipe, but the truth is, I don't remember where I copied it from. I just have an old discolored index card in my handwriting. Been making it for over 28 years and it's the one my boys grew up eating. This recipe made 13 monster cupcakes, I think you could easily get 16 normal sized ones out of it. I always use paper liners, for a 5x9 loaf pan, be sure to grease and flour the pan.
Banana Bread
1/2 C shortening
1 C sugar
2 eggs
2 large bananas
1 tsp vanilla
1 3/4 C A/P flour
1 tsp baking soda
Walnuts-optional
Sanding sugar for top-optional
- Cream shortening and sugar.
- Add eggs, mix well.
- Add bananas and vanilla, mix well.
- Add dry, mix well.
- Fold in nuts, divvy up into cupcake liners and sprinkle sanding sugar on top if using.
- Bake at 350 about 18 minutes for cupcakes, it's been years since I've made the loaf size... I'd guess about 50 minutes, but that's just a guess.
Totally unrelated note: Philadelphia has turned into Fog-a-delphia in the mornings! This has been the weirdest weather I can ever remember... almost afraid to see what the summer heat and humidity brings.
Please ignore the hideous tree my neighbor is trying to "save", ugh...

The bread sounds delicious and I haven't had it for an age. I'll have to give your recipe a try. Your bread looks wonderful. I hope you have a great day. Blessings...Mary
ReplyDeleteA Fodadelphia morning and a tree named Lazarus. I'd say you need a banana muffin just to cope.
ReplyDeleteDrive carefully!
Of course, you could blame an unfortunate tree toppling incident on a foggy morning. Hmm. Just a thought.
I love fog photos. Didn't realize the fog was happening up your way too! Sunshine here this morning as I sit here and admire your banana muffins!!
ReplyDeleteGood morning Lynn, I have made various recipes over the years. I think 28 years of making this one is a good one to try.
ReplyDeleteOur weather is terrible this am and I have quilting class. It is 8:38 and black as can be. Sigh!
Happy days to you.
Hugs, Jeanne
Not much else in the world better than Banana Nut Bread. We love it, too.
ReplyDeleteWe have had heavy morning fog here in West Texas, too. Very weird.....
Your banana bread muffins look great! Cool fog shot, we had the same kind of morning the past couple days here on Long Island, too! Strange tree :)
ReplyDeleteMy favorite recipe for this bread calls for buttermilk. The fog looks enchanting.
ReplyDeleteHi Lynn,
ReplyDeleteThere is no such thing as too many banana bread recipes! I love the muffin idea...I never thought of that! Wouldn't cream cheese frosting sound so good to top it off? YUMMY!
Yvonne
I'm just home from the grocery store with bananas to ripen. I do like banana bread and the idea of having it as a muffin is very appealing!
ReplyDeleteBest,
Bonnie
Wow, look at that fog! We have also been a bit foggy, but it is expected at the shore. Banana bread is a perennial favorite around here.
ReplyDeleteI love banana bread and your recipe sounds pretty yummy! Great fog but not so good to drive in. hugs, Linda
ReplyDeleteSounds delicious! I think that's a great idea, to make individual little cakes like that instead of a big loaf.
ReplyDeleteSo many people love banana bread I'm not surprised there are so many variations on it - just like chocolate chip cookies! I love banana bread, muffins, whatever. These look delicious.
ReplyDeleteI think it's time your neighbor gave up on that tree!
I like making banana bread as muffins, too! YUM! I'll bet your office LOVES you!!
ReplyDeleteI can practically SMELL it baking already!
ReplyDeleteYum yum banana bread and I want it with walnuts. Well in the fog the tree is not as noticeable. Yes, it seems most of the country is having strange weather. At least we are starting out with a lot of rain.
ReplyDeleteI just read about the note card party. what a fun idea and your blooms are wonderful.
ReplyDeleteGreat idea to make the bread in individual serving sizes. I had to laugh at your exercise in patience - now that is quite a tree to be saving!
Ummmm ummmm. Sounds good Lynn!
ReplyDeleteIts been foggy in Baltimore too.
Yummy!
ReplyDeleteLooks like a scene from "Werewolf In London". Especially with that scary tree.
xxoo
I think I like the banana bread in a cupcake form. sandie
ReplyDeleteLove banana bread, or muffins. Ice it and it is a cake! :)
ReplyDeleteLynn -- we had a very foggy morning last week - scary to drive in. Your photo is fabulous!
ReplyDeleteLOVE banana bread and how clever to make them cupcakes :)
Blessings!
Gail
Why in tarnation have I never thought to bake banana bread into cupcake liners??? You're right, it would cook faster & you wouldn't have to be concerned about the middle being done all the way.
ReplyDeleteThanks for the tips about separating bananas & freezing them whole. I've always cut the into little coin shapes, sprinkled with cinnamon & then frozen them on a tray, putting them into a zip-lock freezer bag later. Great to snack on & healthier than candy.
Hugs,
Rett
