Baileys Irish Cream White Truffles
It's an Ina Garten recipe and they are amazing!
To add to the St. Pat's celebration I decorated them with a Drizzle-O-Green!
White Truffles with Bailey's Irish Cream
2 Tblsp heavy cream
7oz good white chocolate, chopped
2 Tblsp Irish Cream liqueur such as Bailey's
1/2 tsp good vanilla extract
1/2 C chopped hazelnuts
6oz bittersweet or dark chocolate, chopped
2 Tblsp heavy cream

1/2 C chopped hazelnuts
6oz bittersweet or dark chocolate, chopped
- Place cream in heat proof bowl over simmering water, cook till heated through.
- Slowly stir white chocolate into cream with a whisk until it's melted.
- Stir in Bailey's and vanilla. Cover and chill about one hour in fridge till pliable but firm enough to scoop.
- Preheat oven to 350 degrees.
- With two teaspoons or 1 1/4" ice cream scoop make dollops of white chocolate and place on baking sheet lined with parchment. Refrigerate about 15 minutes or until firm enough to roll into balls.
- Place hazelnuts on sheet pan and bake for 8 minutes. Cool to room temperature.
- Melt bittersweet/dark chocolate in heat proof bowl over simmering water.
- Drizzle chocolate over some of the truffles, roll the rest in crushed hazelnuts.
- Chill until ready to serve.
- I used Ghirardelli white chocolate chips.
- The drizzle is melted white chips with a little shortening and icing coloring.
- The truffles definitely need some kind of coating on the outside, preferably dipped in melted chocolate or at least rolled in sugar or the nuts (which I didn't use).
- I used my 1 1/4" cookie scoop, it made 10 truffles.
- They are very creamy and you can really taste the Baileys!
- I just noticed... totally unintentional that the squiggly one on the left looks kinda like a snake!

Well, Lynn, as usual I did not read the directions so I did not make the truffles--probably better as mine would never look as cute as yours do! And that squiggle can't be the s-word. Didn't St. Pat lead them all out of Ireland? This is such a fun party. Can't wait to see who the next celebrity chef will be! Linda

Fun fun, Lynn...I posted a little early as I am leaving town on a fun time tomorrow. Have lots to do to get ready...it's a "fly by the seat of your pants" trip and I am excited.
