Citrus Explosion Molded Jello Salad

I found a can of Del Monte Citrus Salad at Walmart and immediately thought it would make a fun Citrus Explosion Jello Salad. I used lemon Jello, lemon/lime soda and the grapefruit and orange sections from the can. We all thought this made a very pretty Jello mold, and the boys said you could taste all of the flavors, even the lime from the soda. It's nice and light, perfect for the summer:@) I like the look of the fruit below, but you may want to cut it into bite size pieces before adding it to the Jello. That might be easier for serving neat looking slices.

Have you ever tried to take a pictures of Jello?
It's kinda... shiny:@)

The can of fruit I started with:

Citrus Explosion Molded Jello Salad
Four serving size lemon Jello
1/2 C boiling water
1 1/4 C lemon/lime soda
15 oz can Citrus Salad, drained well
  1. Mix Jello with 1/2 C boiling water until dissolved.
  2. Stir in 1 1/4 C lemon/lime soda.
  3. Place in refrigerator until partially set, approximately 30-40 minutes.
  4. Gently fold in grapefruit and orange segments.
  5. Pour into 3 C mold that's sprayed with cooking spray.
  6. Chill until set, four hours to overnight.
  7. Dip mold in warm (not hot) water, dry outside and turn Jello out onto serving platter.
Eat well and have a jiggly happy day:@)
