Carrot Salad with Pina Colada Yogurt, Grapes and Raisins

Here's another fun tropical flavored side dish... I've been enjoying subbing flavored yogurt for mayonnaise in vegetable salads lately, and this Pina Colada Carrot Salad was very tasty. I liked the combination of crunchy and sweet, the colors are really pretty too:@) It whips up quickly using store bought julienne carrots, or you can make your own with a food processor or mandolin for extra freshness.
Have some extra pineapple? Go ahead, drain it well and toss it in right before serving, I bet it would be great!

Pina Colada Carrot Salad-adapted from Taste of Home
2 C julienne carrots, really load the cups full
6 oz pina colada yogurt
1/2 tsp Lawry's Seasoned Salt
1 C grapes, sliced into halves or quarters-I like quarters
handful of raisins
optional-a little sugar to taste-I didn't use it but think some folks would like it
  1. Mix carrots, yogurt and seasoned salt.
  2. Gently fold in grapes and raisins.
  3. Chill until ready to serve.
Eat well and have a happy day:@)
