This is best eaten the day it's made.
Kidney Bean Salad with Apple, Cheddar and Bacon-from The Iowa Housewife-Kidney Bean Bowl
14.5 oz can of kidney beans, drained and rinsed
1/2 C celery, sliced
1/4 C onion, diced-you might want to cut back, you know your crowd
1/4 tsp salt
3 Tblsp mayonnaise
1 large apple, diced, don't peel
1/3 C cheddar cheese, diced
4 slices bacon, crisp and crumbled-um, it's ok if only three make it to the salad...
lettuce-optional
- Mix beans, celery, onion, salt and mayo. Cover and chill for 1 hour before serving.
- Mix in the apple, cheddar and bacon, reserving a little bacon to sprinkle on top.
- Serve over lettuce if desired.
looks yummy. makes me think of waldorf salad because of the apple and celery I suppose! have a g reat day!

ReplyDeleteI love beans of all kinds, too, Lynn, and this salad sounds like it would have a nice crunchy texture to it. It'd make a nice lunch or a side dish.
