Aloha Dip!

Hey everyone! It's week 3 of my Personal PIGskin Challenge, and I have a good one that's great any time of year! I'll be joining Foodie Friday!
Aloha Dip combines pineapple, coconut and ginger-it's a dip that's kinda sweet but not too sweet!
It could be called Pina Colada Dip too if you add a little rum or rum extract...
Personally, I suggest making the dip as is and pouring yourself a nice adult beverage to go with it!
This recipe came from my friend Carol - Thanks Carol!
Hope you love it if you try it!
Aloha Dip
8 oz cream cheese, softened
1 cup coconut
1 cup crushed pineapple, drained well (important!)
1 tsp grated ginger
1/2 cup chopped nuts-optional (I did not use them, probably macadamia would be good)
Mix well, chill one hour. Serve with crackers, pretzels, carrots and celery.

My notes:
  1. Don't be afraid to add more ginger!
  2. I would measure the coconut then put it into a food chopper or food processor to make it a little finer.
  3. Also good with bagel chips, graham crackers or vanilla wafers.
I had this crazy idea... I thought this dip might be fun as a "Pinwheel" type appetizer, so I bought some Imported Deli Ham and Pepper Jack cheese, layered them, then smeared the dip on top. Rolled it up, chilled it well and sliced into pinwheels! Truthfully, it was good, but I don't think I gained anything by the extra work-I'll stick with the dip as is:@)
I promise a hot dip next week!

  5. I think this might be good as a fruit dip too. Maybe crisp, cold apple slices for a healthy and yummy after school snack.

  8. I have been dying for this recipe!! I used to order coconut shrimp at a restaurant and it came with this dipping sauce. It was so good I would finish it with or without the shrimp. Now I can't wait to make it!! YUM!!

  24. Where were you in my life when we lived in FL & had a neighborhood pool party every month that we all had to bring appetizers to????? I sure could have used all these wonderful recipes back then!!
    They all sound so delicious & that crazy piggy bowl with spreader is just hilarious. :-D

    Your autumn photos reminded me that I want to look for a pie bird. I've wanted one for ages!

    Yeah for the PUMPKIN PARTY...it's gonna be fun.

  41. I bet this might even be good on a vanilla wafer as a dessert dip! I love your personal hints too. That picture of the piglets in the pumpkin is perfect!!! Sounds like a fun party and I know I can come up with a pumpkin :)
