Healthier Oatmeal Cookies

Hi everyone, Happy Foodie Friday!
I like to take a snack to work and cookies always travel well. I've been on a mission to find a healthier cookie and think I may have one here. I started out with Martha Stewart's recipe, but didn't like the 1/3 cup of oil in it, so I replaced that with unsweetened applesauce-very good. I even cut back on the brown sugar because I find them sweet enough with the raisins and applesauce.

Healthier Oatmeal Cookies
1/2 C whole wheat flour
1/2 C AP flour
1/2 C old fashioned oats
1 tsp baking powder
1/3 C oil, unsweetened applesauce
2/3 C brown sugar (or less)
1 egg
1 tsp vanilla
1/2 C raisins

Directions:
Preheat oven to 350 degrees.
Mix dry (except raisins), mix wet, add wet to dry and mix well, fold in raisins.
I use a cookie scoop, place on parchment lined cookie sheets, about 12 cookies per sheet.
Bake for approximately 14 minutes or until golden brown. Makes about 18 cookies.
Cool and enjoy!
Note: These are not crunchy, they have a softer cake-y consistency. My sweets loving taste tester at the office said they weren't his favorite, although he did eat them! So they may not be for everyone, but they freeze well and this recipe is a keeper for me.

  3. This sounds like a great recipe for my son with Crohn's disease. He has to stay away from all of those prepackaged ingredients like high fructose corn syprup, etc.

  6. Yummy, chewy and a healthier version- what more could you want from an oatmeal cookie? These sound so good. I love oatmeal cookies with a good cup of coffee!

  10. Always looking for a healthier version of the old favorites. Cooking Light magazine remakes readers favorite recipes and quite often I look at them and think they could make them even lighter without losing taste.
