I love radishes and dill! A little lemon zest never hurt anything either...
Lovin' the fun little "toasts" that I found near the deli at the Walmart, so cute for appetizers.
If you're looking for a nice fresh dip that's different, I do suggest trying this!
Radish Dip
1 lb radishes (about 25) julienned, plus more for serving
1 1/4 C sour cream
3 oz feta cheese, crumbled
1 tsp lemon zest
3 Tblsp fresh lemon juice (approx 1 1/2 lemons)
1 1/2 tsp kosher salt
1/3 C chopped fresh dill
-Mix all in the morning and refrigerate until ready to serve.
-Serve with toasts, crackers and sliced radishes.

Notes:
- The recipe is easily cut in half.
- This is a mild dip that really does get better the longer it marinates. The radishes add crunch and the feta gives it a bit of a salty bite. I think chopped green olives would be good in this too.
- While it needs to be stored in the fridge, the dip is most flavorful at room temperature.
- The only thing I did differently was, I used the grating disc of my food processor (just add the radish not the juice)-julienned radishes Martha... really???

I guarantee my mom will mention this one. She loves radishes. I've never really loved them, but I bet I would still like this dip.

ReplyDeleteI love feta so I would probably love this dip. I used to eat radishes as a snack when I was a kid, as I got older I didn't like them as much. Maybe I need to pick up a bunch. I love those little toasts, they are very tasty. xo

I love dips to serve them before dinner by the bar area, or as appetizers in the living room for dinner guests...than later I lead them to the main food at the dinner table. ReplyDeleteOh My Goodness Lynn! Where were you when I was pregnant for my youngest son and SLEPT with a big bag of radishes and had a SPARE BAG under the bed? I just COULDN'T satisfy my hunger for radishes! OK, that was 30 years ago "BUT" I still love radishes "BUT" I don't dream about them anymore. I MUST,MUST,MUST make this. It sounds "OH SO GOOD"! I'll whip up some for the weekend. VERY DIFFERENT! Thank you SO MUCH!
