Jiggly Jello Cupcakes
- Bake cupcakes and cool completely.
- Add one cup of boiling water per 3oz pack of Jello. Mix well and chill until firm-one 3oz pack will make at least 14 cupcakes if poured into something that makes it about 1" deep. I used a 5" ramekin.
- I used a cupcake corer (Target/Williams-Sonoma/Amazon) and took out the center of the cupcake.
- Remove the Jello from the pan, I ran hot water around the edges and turned it upside down on a plate. Clean the corer and use it again to cut the Jello into circles and place one in the center of each cupcake.
- Frost with Cool Whip and sprinkle with green sugar if desired.
- Store covered in fridge.
What other oldies but goodies could you make for St. Patrick's Day with Jello?
- Jigglers-2 (8 serving size) Jello packs and 2 1/2 C boiling water. Mix well and pour into 9x13 pan, chill till firm. Cut out with a clover shaped cookie cutter.
- Poke Cake-Bake a two layer cake, poke holes with a fork, mix 2 C boiling water with (2) 3oz packs of Jello. Slowly pour over cakes. Chill, unmold and frost with Cool Whip. Full directions here. Note: I tried to make Poke Cupcakes... yea, don't do that. What a mess.
- Jello Shots-3oz box of Jello, 6oz boiling water, 6oz vodka. Pour Jello into a bowl, add boiling water and mix till dissolved. Stir in Vodka. Let cool, then pour into shot glasses (or those little disposable plastic ones) and chill till firm.
- Parfaits-Layer lime and lemon Jello cubes with Cool Whip/whipped cream in a pretty glass. Or do something really fancy like this.
