Sesame Noodles with Broccoli-adapted from The Pioneer Woman1/4 C soy sauce
2 Tblsp sugar-I just add maybe 1 Tblsp
4 cloves garlic, finely minced-cut back if you'd like, you know your crowd
2 Tblsp rice vinegar
3 Tblsp sesame oil
12 oz thin spaghetti
broccoli, cut into bite size pieces
4 scallions, sliced thin-or some chives from the garden
fresh ground black pepper-optional
- Mix everything except spaghetti, broccoli and scallions in bowl.
- Cook spaghetti to your liking but add the broccoli during the last 4-5 minutes. Drain well.
- Mix everything together.
This sounds terrific, Lynn! Do you need salt or is the soy sauce enough? I have to try this!

Howdy! The soy sauce is plenty:@)
DeleteLooks delicious....love these light meals.
ReplyDeleteWhat a perfect summer meal, Lynn. I love these kinds of dishes that are quick and light.
ReplyDeleteLove the flavors in this dish, especially the sesame oil. I like to make salads like this that I can have for lunch several days during the week. Lots of great flavor but not on the heavy rich side. Sounds yummy.
ReplyDeleteThis sounds delicious and so easy Lynn ! I love that it's a one pot meal too :)
ReplyDeleteThis sounds like one my niece brought to lunch a few weeks ago, but this sounds even better!
ReplyDeleteWe certainly need to eat more light and meatless meals and this looks like a real winner. I'm crazy about sesame oil and always have a bottle in the 'frig.

Yum -- this looks and sounds delicious, Lynn! Spaghetti noodles and broccoli -- what's not to love? :) The Pioneer Woman's recipes are good, but they do tend to be very, um, fattening. You were wise to adjust your recipe. I hope you have a wonderful weekend, Lynn!
