Sesame Noodles with Broccoli-A Lighter Version of a Pioneer Woman Recipe

Even though I'm very fond of chicken, beef, pork and bacon... I do eat a lot of meatless meals, really:@) One of my favorites is Sesame Noodles. It's easy to make a lunch out of them by adding broccoli to the pasta pot during the last few minutes it cooks. Basically I start with the Pioneer Woman's recipe but cut back on the oil (and maybe a couple more things). This is a filling and fragrant meal or side dish.
May be served hot or cold and this recipe is easily reduced.

Sesame Noodles with Broccoli-adapted from The Pioneer Woman
1/4 C soy sauce
2 Tblsp sugar-I just add maybe 1 Tblsp
4 cloves garlic, finely minced-cut back if you'd like, you know your crowd
2 Tblsp rice vinegar
3 Tblsp sesame oil
1/2 tsp hot chili oil-I sub a few hearty shakes of crushed red pepper
4 Tblsp canola oil-if you feel it's too dry maybe add a drizzle, but I don't
12 oz thin spaghetti
broccoli, cut into bite size pieces
4 scallions, sliced thin-or some chives from the garden
fresh ground black pepper-optional
  1. Mix everything except spaghetti, broccoli and scallions in bowl.
  2. Cook spaghetti to your liking but add the broccoli during the last 4-5 minutes. Drain well.
  3. Mix everything together.
